SQUEE! I got another package yesterday! Vals‘ Vegan 6 Layer Bars:
YUM. This is about half of what she sent!! Good thing we have company to help me eat these… although I may want to hide them, they are that good! Yum, I’m lucky! She was sweet enough to include some unexpected goodies I’ve been wanting to try for a while:
I love Luna, and have been wanting to try the Dulce de Leche! I’ve never had a Kardea, so I’m looking forward to trying those also, especially the Lemon Ginger. Later, though; I’m eating vegan 6 layer bars right now:

I’ve been craving fajitas for some time now, so we’re having them tonight! It’s funny how tastes change, I used to loathe fajitas, I don’t even know why. Then, poof, they sounded good! I made some at home, where I could control the flavors. Heh. Now I make them sometimes twice a month.
More often than not, I use faux meat as the fajita protein. My favorite for this sort of recipe? Soy Curls:
These, my friends, are genius. They are 100% soybean (one of the few soy things I eat). They are dehydrated and are in a free-form strip shape. You rehydrate them in warm water, then cook as you like. I usually saute them.
Heh. I asked Jason to grate some cheese. For the two of us. We have grated cheese for months:
Once rehydrated, I added some water to my wok with fajita spices (cayenne, garlic powder, paprika, cumin…) and added the curls. After they soaked up the flavor, I added chopped onion, bell peppers and some frozen corn:
Mmm! My fajitas, wrapped in a FlatOut (my new favorite!!) and sprinkled with cheese:
So so good. I can’t believe I missed out for years. After dinner, we got silly. Basil gets silly with us:

I’m so glad that you liked the bars, and equally gladthat they arrived in one piece – I was worried they might fall apart during the move!! I’ll be posting the recipe sometime soon on my blog but honestly, they are a cinch to make. Enjoy!
I love your dog. Not only is he adorable, but he’s named Basil. I hope that at some point your puppy can meet my puppy.
