ahh, summer is finally here! I guess my summer food lures worked…
We also had a houseguest, which I always love! I should run a Bed & Breakfast… I love having people at my house, cooking for or with them, visiting and talking and laughing…
When we made plans for L to come stay at the end of her vacation, she requested “a smoothie, with chia seeds” for breakfast. I made us a green monster that gave me energy all morning! I forgot the chia, so I sent her home with a bag and some smoothie makins’…

This morning, the recipe for two included:
2 cups coconut milk
5-6 large handfuls spinach (I kept adding & vita-mixing, adding & vita-mixing!)
one large banana
one serving vanilla protein
There was enough left over, so Basil was not left out:
Yesterday was beautiful – the sun was out, it was warm… L showed up in the afternoon, and we hung out in the kitchen while I made some food for a BBQ we had last night.
While we waited for some other friends to join us, we had some snacks. I made Angela’s Feeling Nutty Dip, with one modification.
I added roasted tomatoes! I had some leftover that I roasted a few days ago, so I used those. I’m sure it tastes completely different than Angela’s, and I intend to make her real recipe soon, but this was still amazing! I also made a cashew + almond dip, and the flavor was great.
So the ingredients I ended up using were:
7 – 8 roasted tomatoes (about 1 cup…)
1 1/4 cup cashews
1/4 cup almonds
3 tablespoons lemon juice
6 tablespoons water
2 cloves garlic
1/2 teaspoon sea salt
few leaves basil
All into the food processor! Go!
This is really really good. I served it with veggies and rice crackers.

it is a really good one… pretty much my standard daily First Breakfast…
…if it’s just for me, I cut the milk to one cup, but sometimes still add that much spinach…
I love how green the smoothies are! Mine never look that nice. P.S. How cute is Basil enjoying a Green Monster!
mine look murkier when I add blueberries or even almond butter… but being mostly spinach it’s pretty vibrant – I love it
yes, Basil is pretty spoiled, he loves his GM… while I’m prepping them he stands there watching me, so I feed him leaves of spinach to chew on while he patiently waits…

I just want to come over and live at your house! We could eat delicious, healthy food all day and do facial scrubs. And take Basil on walks.
This dip looks incredible – and you’re right, it would be so easy to spice it up. Also, I love the rice crackers. Billy has a sensitivity to gluten so we stick to rice or corn products when possible.

MMMM, I just bought some spinach and banannas and I plan on making myself a green monster tomorrow morning! I hope my tiny cuisinart can handle it! Oh and that nut “funny” dip is making my mouth water as we speak.
and if you do open up the B&B, you already have a fan for those of us that need the extra noise! hahaha

I make a lot of pasta sauces from scratch, by adding whatever veggies are sitting in the fridge and need to get used up.
Love the idea of using cashews in a spread. Delicious.
