I am all about granola over here, and that is most definitely a Good Thing!

In one of my favorite deli cups, in ceramic form, to remind me of the city I love so much…
There is a recipe I’ve been wanting to try sometime, purely out of interest in the final result. I couldn’t make dinner for my friend and not bring along dessert, so this was a perfect time to try it. The recipe?
One box cake mix (I used gluten free)
one half container Cool Whip
one egg
I picked up a box of Betty Crocker’s gluten free yellow cake mix, and I used my Ener-G egg replacer.
The don’t recall where I heard of this recipe (I found a note in my phone with these three ingredients – that’s all!) so I didn’t know if I was to thaw the cool whip. So I didn’t. The dough was very sticky, and in my metal mixing bowl, very cold!
I dusted my hands with powdered sugar and rolled dough about 3/4 to 1 inch each, placed two inches apart on a Silpat lined cookie sheet.
Baked at 350 for 12 minutes.
These taste good! My original phone note said chocolate cake mix, but I wanted a light vanilla flavor and that’s what I got! They are crispy crunchy and very light and airy. I made nine cookies, and still had about half the dough mixture – into the fridge it went.
Pretty easy recipe, now that I know the result (and where to find cool whip in the grocer!), I will make these again… I imagine non gluten free folks could use any cake mix and make many cookie flavors.
With the other half of the dough, I added these:
There it is. That did it! These are amazing – added strawberry sweetness without giving up that light and crunchy texture.
I rolled this batch in powdered sugar, so they look like crackle cookies.
We have friends that live on the top floor of a condo in the Pearl District – that’s where we spent the evening of July 4th. They have a huge deck which gives many great views of our beautiful city.

The cookies look great! I love that you did a small batch too. Great portion control.
If I know I won’t have much help eating what I bake, I will half a recipe also.
And you’ve done it again! The strawberries were a touch of genius. I think you should consider opening a gluten free, vegan bakery! I’ll do your marketing.

I see that cake mix at the grocery store all the time but have hesitated to buy it because it got bad reviews, but I’m gonna have to pick some up next time I’m shopping so I can try this recipe. =)
hmm.. I hadn’t even researched it – what did the reviews say? I don’t know if I can accurately say good or bad, since I made cookies and in a really weird way!

I think they said it was mealy, dry, and sort of grainy, like cornbread? I liked their chocolate cake mix, though, so I’m hopeful about the yellow. =)

Oh goodness….I am drooling over here! I love adding strawberries to cookies and muffins that I make. Add some banana soft serve and make a nice strawberry short cake!
