I’m a big fan of soy because I have been a vegetarian for 3 years and recently decided to try being vegan. Having soy in my diet makes it much easier to eat a variation on the things I love!

I would LOVE to try those soy curls! Ever since i saw them on your blog I’ve been on the look out for them but with no luck!

My thoughts on soy are that I like it. I pretty much only ever consume it as milk and tofu though, I haven’t branched out beyond that. But, as a newish vegetarian it’s nice to have as an option, I mostly still create my usual recipes from my carnivore days, but sub the meat out for tofu.

The hubby and I like soy! We get a veggie crumbles that we’ve used in tacos/mexican, shepard’s pie, etc… but they are more like ground beef so it’d be cool to try something new!

I am confused about soy, really. I thought it was ok to eat then I hear it’s not. I understand the GMO aspect of it, and I always eat non-GMO soy… I also can see that its not easily digestible for some and even I get a stomach ache if I have too much tofu. Soy milk? I drink because I really dont like milk; I never did. But I change it up for almond/rice milk just to add to protein powder. I guess in the end it’s moderation that is key??

Cool. I do eat soy, but I try to make sure I include multiple protein sources not just all soy all day.

I would likely use them the way you have – especially for fajitas or quesadillas. Pizza would be good too…..
