summery spa salad

Our breakfast this morning included these:

I love fresh juice, and Do Not Love paying $7 a cup for it. I also have not found it near my house. We have a juicer, we just rarely use it. Until now. I am determined to use it daily! Fresh juice is delicious and energizing.

and it is beautiful and bright:

Fresh juice for two included:

4 apples
8 carrots
ginger – about 3 x 2 x 2 inch piece
lime – 1/2 squeezed

Second breakfast was 5 tablespoons hemp hearts, 6 oz peach chobani, and a pumpkin energy ball.


I am so excited about a salad I made today. It’s been rollin’ around in my head for a few days, and I was kinda wondering if the flavors would work. It is perfect for summer, very few ingredients, and Jason loved it too!

pineapple and sea salt.

This was delicious on a warm evening. We also had vegan green chile enchiladas. I am very happy with how this salad turned out – fresh and summery. Delicious. The sprinkle of sea salt brings out the flavors.

I think there will be a bowl of this salad in my fridge all summer. I have other plans for it.

Summery Spa Salad

1 can black beans
2 cups corn
1 cup pineapple, chopped
6-8 basil leaves, chopped
sea salt, to taste

Speaking of summer, we are LOVING it around here! Basil could sit outside all day, he loves the sun! We try to go on a long walk in the early morning, before it’s too hot outside. When it’s too hot, this is what happens:

Poor sleepy pup – he usually sits perched on top of two of those pillows. He fell off, kinda. :)

So sweet.

I wish I loved beans because that salad sounds awesome! I do like to make summer salads with corn and some cherry tomatoes, cuke, olives and feta and then i usually just drizzle some white balsamic in there with pepper and sea salt and a bit of oil. Yum! I love corn in salads! And I also love to just throw it all in a wrap or pita and eat it sandwich-style.

My favorite summer foods are probably watermelon and then anything fresh from the garden, cukes, tomatoes, herbs.

I had a juicer for a couple of years and I NEVER ever used it. It just seemed like too much effort. I ended up donating it to the salvation army last year. Now I just make smoothies instead. I love, love, love blueberries+banana+cherries+ice. It tastes like it should be bad for you because it’s so sweet, but it’s totally a win.

I have a juicer too, and don’t use it enough (it’s kind of a pain to clean!). I should though, and I like the idea of apples, carrots, and ginger juice A LOT!
Basil is like a carbon copy of Clyde. He also loves the sun and likes being perched on top of the couch or up on cushions (anywhere with a birds-eye view of the house)! Love the pics of him passed out :)

today I decided to clean the juicer before I could even drink the juice… under hot water it’s basically rinsing, if you do it right away… once piece I had to use the scrub brush, but really, like a 90 second ordeal. totally worth it!! :)

Yes, Basil needs to always be sitting somewhere where he can see BOTH of us if we are both home… if one of us is gone, he sits where he can see whomever is home AND the front door. sweet pets we have…

i want a juicer! but we have limited storage space in our kitchen, and since i’m getting a mixer and a food processor for the wedding, i had to restrain myself… only so much cupboard space

I know… thus the reason ours was stuffed in a back cupboard… I am drinking my fresh juice as I type this, and decided the juicer stays on the counter… I don’t know where, but… somehow! :)

Haha no it’s cool. I’m going to try and swap out the header so it fills up the top of the page (That’s what I get for going from a 2 column to a 3 column) but other than that it’s DONE.

Love a corn/black bean combo and pineapple is a genius move! I’ll have to try it. My fave hot weather food lately is a chilled quinoa salad with lentils, avocado and bell pepper. And frozen grapes. AND watermelon. :)

Mmm… this sounds YUM. I used to make a pot of quinoa every Monday, to last the week… I have not done so in a few weeks and I am missing it…

hey, by the way… have you ever cooked with millet? I have some, and I’m wondering if it is cooked “by absorption” like quinoa, rice, etc? :)

Cant go wrong with a good BBQ for the summer, keeping the heat outside!!

Try this juice for a cool refreshing bevy:

juice lots of lemons and add an apple or two for sweetness.

Instant lemonade! (really, you will be amazed at how delicious it is)

we have a juiceman. :) Jason had it before I met him… I have not researched juicers, so I don’t know how it compares… but it is EASY to use, and I LOVE it.

My favorite hot weather food is anything on the grill. For some reason summer just screams grill to me! My mom actually just grilled peaches the other day and served them over field greens with walnuts and feta….deeelish!

I love fro yo in the summertime. I can eat it every day but try not too but it just makes me happy and ironically enough, warm on the inside!

My dog is absolutely passed out right now from the 2 mile walk we went on tonight–I love it, it’s like a little free time for me lol

Oh, that salad looks so perfect on a hot summer night! (Does it actually get truly hot in Portland? It’s always so cold here, on the Lost Coast part of the Pacific Northwest. Sorry, random tangent. :D )

I can’t believe you’ve seen Willie Nelson in concert! Gosh, I’m just green with envy right now. You ROCK, okay? Just…you’re too cool for words. I think if we lived in the same city, we’d so be best friends. :D

Where are you – Humboldt County? :) Northern Cal, probably?

My favorite grandpa, Grandpa Z, died several years ago… a few years before that he grew his hair into a Willie braid. It was awesome, and it totally fit my grandpa. HE was awesome. The best. :)

and that braid was Kick Ass.
