vegan stuffed tomatoes

My mom came over the other day… can I just say, I love my mom??

I am so incredibly lucky to have such a close and fun relationship with my mom – she is a great friend. To have her live 20 minutes away is really great, and really necessary. I could go on and on – my mom is the best – not only because she brings me My Favorite Flowers:

and not only because she brings Jake & Elwood over to play with Basil – LONG DOG PARTY !

and that she loves to help me cook what I think up, and oohs – ahhs with me as we eat the deliciousness:

Mom brings me cute dishes! Here’s some more she gave me… wine & cheese plates. I love them!

So, I’ve been following a vegan diet again – almost. I’ve been saying I’m a vegan except for cheese and sushi. Daiya eludes me – I have yet to find it… and as far as I know, there isn’t anything close to a goat cheese or a brie in the vegan world. (PLEASE correct me if I am wrong – this is one area I would LOVE to be wrong!)

Still…

Ricotta.

That I can do!

Vegan Ricotta

1 container extra firm tofu
2 cloves garlic
2 tablespoons nutritional yeast
sea salt – to taste

Combine all into a bowl. Food processor if you want – I just mashed it in a bowl.

Then?

This. Remember this? Garlic Gold is my favorite.

Vegan Stuffed Tomatoes

roma tomatoes
vegan ricotta
Garlic Gold
fresh basil, chopped
cashews, processed or chopped

Halve the tomatoes, scoop out the seeds. Mix vegan ricotta with Garlic Gold and basil. Fill tomatoes with ricotta mixture.

Dip In The Cashews:

Place in (olive oiled) baking dish, sprinkle with more Garlic Gold. Bake @ 350 for 15 – 18 minutes.

Oh, yes. nomity Nom NOM.


This was so delicious. Right, Mom?  :)

Haha! I love that your mom’s doxies are named after The Blues Brothers. Awesome :) They look so cute all together! And those tomatoes look awesome too!

:) it’s a favorite move of my mom & I… :) when she knew she was getting two brother doxies, we were thinking of “couples” names for them… this was just perfect!! :)

Oh My….I won’t let that all go to my
head…but yes, we are very blessed with
a fantastic relationship; I always feel
so good when family gets together..we are a
‘crazy lot’…..so much laughing and usually
eating comes in there somewhere…weeeee!
Now, as for those tomatoes….ooh la la; you would
have thought we had never eaten before…lots
of ‘umm and ooh’ going on..

Oh, dear me, that recipe looks amazing! I keep trying to veganize my cookies and baked goods, but it’s very trial-and-error at this point. In other words, I keep failing. xD

Aw! I love my mom lots too, I hear you! I wish I could get mine to cook with me though. She HATES cooking! My father too for that matter so it’s good I spent lots of time with my grandma otherwise I probably wouldn’t love cooking as much as I do!

As for Garlic Gold, the day they decide to ship to Canada I will be all over those products, until them I will admire them semi-jealously on the interwebz!

I hear you on the vegan thing. I love how I feel when I eat vegan, but I have a hard time giving up a spot of cheese here and there. Sometimes I need a bit of yogurt, too.

I love stuffed tomatoes! I like to make them with brown rice and black beans, and pretty much whatever else I have on hand, as long as they’re spicy and topped with bread crumbs!

we used to shop WF, and since we moved (okay, TWO YEARS ago!!) it’s not as close. but you know I’ll make a trip just to try Daiya. I’ve been wanting to for SO long…

I don’t veganize too many things, probably because I was a vegan for about four years and really had a hard time with it in the end. I just love dairy and eggs so much. But I sometimes make a pizza without cheese, and load it up with veggies instead.

I am going to be trying to ‘veganize’ many recipes as I will be venturing into the Blood Type diet and I am a Type A. I will totally be trying this recipe soon! Yummo! Thank you for your blog. It has given me ideas I would have never come up with on my own!

hi Christin! sorry I didn’t get this until now – but YES, I’m pretty sure they would hold up in the fridge? I haven’t tried, but perhaps you could make up the filling and then just prepare tomatoes just prior to the event?
