lucuma minute muffin

Today’s breakfast needed to be fast… it ended up being tasty as well!

I made a minute muffin – todays included:

1/4 cup “flour” – half almond meal, half coconut flour
1 tablespoon lucuma powder
1/4 teaspoon baking powder
1 egg
1 tablespoon earth balance


Lucuma powder is a natural sweetener. I’ve never seen a lucuma fruit, I’ve heard it resembles an orange, others say more like a persimmon. Lucuma has iron, beta carotene and niacin, and tastes sweet – almost like maple.

Lucuma is also raw, vegan, gluten free and kosher.


I love the flavor, it makes a pancake – sweet muffin. My mind is racing with so many ideas for lucuma!

Now I’m drinking what may be my favorite flavor of Herbal Water – the cinnamon orange peel – YUM. Refreshing and mild.

I’ve never heard of lucuma before, but thanks for the tip. I always love to have easy recipes like that too. Have you ever made cake in a microwave? (Hmm…I’ve been craving chocolate all day too, so I might have to make some soon. It’s not amazing or anything, but it super easy and curbs my chocolate cravings when I don’t want to bake brownies or something.)

I had never heard of lucuma before this!

I love your variations of the insta-muffin! They look so much more flavorful than the plain old flax ones. :D

I need to try more Herbal Water flavors bc the one I had was not my favorite, like drinking a leaf – haa.

ha! :) I don’t know if Jason liked it either… the one I gave him he drank a little and gave back to me… I LIKE the taste of greens, tho, so the one that tastes like a leaf would probably be GOOD to me! :D

I had been wondering about this stuff for a while now – SO great to find someone who’s tried it to let me know what it’s like. Looks like I’m going to have to get some of this stuff to play around with :)
