bruschetti !

I will really miss my fresh romas and basil this winter. During the spring and summer we probably have bruschetta at least once a week. Recently Jason hopped on the anti – inflammatory eating style with me, so no bread right now. :)

(yes – no tomatoes either. I have Never Been Able To Give Those Up…).

I have some gluten free (rice) pasta, so I made us a bruschetta pasta.

I made bruschetta from roma tomatoes, fresh basil, extra virgin olive oil and balsamic vinegar:


Prepared the pasta, and Mmm… fresh clean flavors:

These are some of my favorite flavors, fresh tomato and basil.

I made a salad of romaine, peppers and broccoli. We enjoyed it with my raw ranch dressing!

For dessert tonight I made a raw fruit dip. The main ingredient is dates, and I’m having fun thinking of fun names for my new dip. :)

I am still working on it (meaning I need to make it again with the recipe I scribbled down, so I have an actual recipe to share!) :) It is delicious. This one had hemp hearts, which I may not include again, unless I can figure out how to process them to creamy.

I meant to tell you that your raw ranch has me thinking about ranch hummus – doesn’t that sound good?? I love pasta lately – noodles of all types make me happy. Rice noodles in Asian dishes, whole wheat with marinara…ok, now I want pasta and it’s 8:54AM.

How about “date dip”. Ok I have no good ideas, but it sounds great!

My fave pasta is really the white stuff…but I usually buy/eat brown rice pasta from TJs.

Your dip sounds interesting (in a good way:)! I love noodles too, and your pasta dish is totally making me want pasta tonight. I am getting so much meal inspiration from the blog world lately…love it:)
