My brother and I have a lunch date for sushi tomorrow. I always crave sushi, and could not wait.
Remember my vegan sushi rolls? I made a quicker version for my lunch yesterday. No rice, no rolling. Well, sorta rolling.
I made my sushi filling, scaled to one serving:
one quarter block of tofu
1/2 teaspoon Vegenaise
lots of Sriracha
one green onion, chopped
Mash the tofu, mix in Vegenaise, Sriracha and onion.
I made simple rolls out of nori sheets:
For me, all of these items are staples in my kitchen.
This took five minutes to prepare. It made three “rolls”.
Don’t worry, Kevin. As you well know, I can eat sushi every day! Looking forward to lunch tomorrow!

I bought the nori sheets to make sushi a few weeks back, but still have not attempted them. I did take the first step at least in buying the sheets…

Love me some sushi! My husband has learned to make it! It’s half the cost to do it at home! Yes, it’s a little time consuming, but well worth it! I could eat it every day!
I love those seaweed wraps. So good and you can literally stuff anything in them!
