mashed potato heaven

I was craving mashed potatoes recently, and I spent more than a healthy amount of time daydreaming about different flavors and interesting ingredients I could add to them.

Then I saw Angela’s High Protein Garlic Mashed Potatoes.
Oh good gravy. Or beans. Whatever.

Fresh scrubbed:


What went into my batch:

15 organic red potatoes
2 cans pinto beans, drained but not rinsed
5 cloves garlic
2 tablespoons Earth Balance
sea salt, to taste

While potatoes boil (about 20 minutes), blend pinto beans + garlic in processor. Mash potatoes with Earth Balance, add bean puree and combine. Sea salt to taste.

Enjoy immensely and thoroughly.

Thanks to Angela, we can now eat mashed potatoes for dinner! :D Which is exactly what we did!

I actually made bowls for us, with veggies and a few more beans. Perfect dinner!

As you can imagine, these taste incredible. Very buttery, garlicy, delicious. Welcome to the spabettie household, protein potatoes – we will be enjoying your company all winter!

adding beans? that’s pretty awesome, and i might have to give this a shot. i love that it’s got the extra protein! :P

Mashed potatoes are my favorite food! Back in the day, I would order meals with double mashed. OK, maybe that was over the top, but these are not. They look so good!

Great idea. I made a cannellini bean mash once (sort of an accident type of thing) that tasted sooo much like mashed potatoes that I was going to try to remember to add them to my mashed potatoes one time. Haven’t remembered yet ;-)

Oh my gosh, this is GENIUS. I am Irish so I love me spuds and I am not one of those people who think potatoes are “bad” foods. But this combo really does make the awesome potato even more awesome!
