I was craving mashed potatoes recently, and I spent more than a healthy amount of time daydreaming about different flavors and interesting ingredients I could add to them.
Then I saw Angela’s High Protein Garlic Mashed Potatoes.
Oh good gravy. Or beans. Whatever.
What went into my batch:
15 organic red potatoes
2 cans pinto beans, drained but not rinsed
5 cloves garlic
2 tablespoons Earth Balance
sea salt, to taste
While potatoes boil (about 20 minutes), blend pinto beans + garlic in processor. Mash potatoes with Earth Balance, add bean puree and combine. Sea salt to taste.
Enjoy immensely and thoroughly.
Thanks to Angela, we can now eat mashed potatoes for dinner! Which is exactly what we did!
