fudgy pumpkin brownies

Basil goes to “his grandparents” house when we are out of town. After about 30 minutes, he is comfortable and happy, and running the show, I hear. My parents have two dachshunds of their own, so it truly is a Long Dog Party over there.

To thank my parents for watching Basil while we were on vacation,
I made some sweets.

These are dense and chewy – almost like fudge.


Fudgy Pumpkin Brownies

1 cup agave
1 can pumpkin
1 egg (I used Ener-G egg replacer)
3 teaspoons vanilla
1 1/3 cups flour (I used a mix of tapioca + GF all purpose)
3/4 cup cocoa
1/2 teaspoon baking powder
1/4 teaspoon sea salt
3/4 cup chocolate chips (I used Whole Foods vegan)

Combine agave and pumpkin – add egg and vanilla. Combine flour, cocoa, baking powder + salt, add to sugar mixture. Stir in chocolate chips.

Bake @ 350, 50 minutes or until inserted toothpick comes out clean.

I had to taste test, of course. With Barney Butter, of course.

Of course you had to taste test – I would love to taste test for you ;-) So is Basil just worn out completely by the time you pick him up?

YES !! he is *SO* excited to see us, and then clings to us while we visit with my parents, as if we’d leave him again. then he gets home and zips around the house a bit, and finds his blanket and crashes :)

Oh my -do those look soooo good right now. I think I may have to get a bite of chocolate just to get my mind off baking those right now.

Question- I’m new to GF baking… why the tapioca flour and GF all purpose? Could you just use all GF AP flour?

Long Dog Party, that is too much, literally:) I want to get my parents a bumper sticker that says “I Love my Grandog.”

I prefer dense and chewy brownies better than the cakey and light brownies. These fit the bill…I want to try these. Hopefully they freeze well too so I can make them ahead of time for parties

So much fun having three “long dogs” running around….
Adding just one more is like ‘a sea of puppies’..so
fun!!! Love the pumpkin brownies also; but I guess
my favs are still black bean brownies…uuuuuummm!
