Basil goes to “his grandparents” house when we are out of town. After about 30 minutes, he is comfortable and happy, and running the show, I hear. My parents have two dachshunds of their own, so it truly is a Long Dog Party over there.
To thank my parents for watching Basil while we were on vacation,
I made some sweets.
These are dense and chewy – almost like fudge.
Fudgy Pumpkin Brownies
1 cup agave
1 can pumpkin
1 egg (I used Ener-G egg replacer)
3 teaspoons vanilla
1 1/3 cups flour (I used a mix of tapioca + GF all purpose)
3/4 cup cocoa
1/2 teaspoon baking powder
1/4 teaspoon sea salt
3/4 cup chocolate chips (I used Whole Foods vegan)
Combine agave and pumpkin – add egg and vanilla. Combine flour, cocoa, baking powder + salt, add to sugar mixture. Stir in chocolate chips.
Bake @ 350, 50 minutes or until inserted toothpick comes out clean.
I had to taste test, of course. With Barney Butter, of course.

YES !! he is *SO* excited to see us, and then clings to us while we visit with my parents, as if we’d leave him again. then he gets home and zips around the house a bit, and finds his blanket and crashes

Question- I’m new to GF baking… why the tapioca flour and GF all purpose? Could you just use all GF AP flour?
you totally can. sometimes I just like to mix it up. not necessary at all.

I prefer dense and chewy brownies better than the cakey and light brownies. These fit the bill…I want to try these. Hopefully they freeze well too so I can make them ahead of time for parties
