cookie fail…

I tried to make my gluten free cut out cookies again – but this time I used all coconut flour.
I am thinking that is the reason they were crumbly and would not form. I’ve never used egg replacer for these cookies, so it could’ve been that.

All was not lost, though! I dumped it all back into the bowl and stuck it back in the fridge. I ran to the store for another tub of (non-hydrogenated – YAY!) Tofutti Better Than Cream Cheese.

I also bought flowers for Jason:


Gluten Free and Vegan Lime Bars

Crust:

2 1/2 cups coconut flour (Bob’s Red Mill)
1/4 cup cornstarch
1 teaspoon baking soda
1 cup butter (I use Earth Balance)
2 eggs (Ener-G replacer)
3/4 cup sugar

After giving up making cookies, press into prepared baking pan. Bake @ 375 for 10 minutes. Cool 5 minutes.

Topping:

8 ounces Tofutti vegan cream cheese
1/3 cup coconut milk or almond milk
1 cup powdered sugar
1/2 cup lime juice

Combine and spread over crust. Bake @ 375 for another 20 minutes.

This crust tasted so good! I really want a cut out cookie that tastes like this. I will keep trying…

aren’t they pretty? I was thinking on the way to the store… what kind of flower can I get for Jason… and thought, sunflowers are not too “girly” and then I saw THESE… pretty! :)

At least you had a backup dessert though right?? I’ve had a few disasters – mostly after the fact. Like spilling an entire pitcher of tea on our quesadillas or Maddie licking the side of the cake I made for my sister’s baby shower. Fun stuff like that ;-)

I have forgotten to add any kind of flour to cookies — when I was scooping the dough onto the pan I kept thinking “these are so runny, I hope they solidify in the oven”. NOPE — they turned into a solid sheet of burnt dough.

Just yesterday I had a cookie fail.
I quartered a recipe but forgot to only put 1/4 egg instead of the whole one. They were weird, yellow, and didn’t rise right :(

haha I’ve had plenty girl! But my most recent was a pancake recipe I tried to veganise and erm, they were gross. My hubby ate them just because he hates waste, but boy oh boy, it’s enough to knock your confidence right?

My ‘fails’ are too many to list. Just ask Eric. LOL Those bars look like a pretty tasty “fail” to me. Yum. Hey…do you ever cook with sugar replacements? I have been using organic xylitol and of course Stevia. I am wondering because I was (I have since fallen off of the sugar-free wagon)going totally sugar free for quite some time and my body was loving it. Alas, I am addicted to sweet things. Fruit just doesn’t cut it when I need something naughty. Just wondering if you have any recipes that are tasty and don’t use flour and sugar? Help a sister out!

I do not have any experience using sugar replacements… I need to educate myself more. I’ll work on this – any specific dessert you’d like me to tackle?

These look delicious! Fail turned win for sure. :) One cookie fail I had was making pumpkin cookies. It called for a cup of pumpkin, and I read it as can.

sorry about the cookie fail.. that just means the next batch will be even better!

my cooking fail was adding too much cinnamon to a green monster.. it was TERRIBLE — almost undrinkable

Only one?? I fail regularly—which I’m OK with because I learn each time. Sometimes what I learn is to work within my skill set, other times I learn about actual baking and how little particularities can mean a world of difference. :)

I had a GF BF once (ha ha!) and he was tall and thin, so naturally, I turned all my baking GF so he would eat most of it. It really seems like it’s an art, figuring out exactly *which* GF flours are best for what kind of recipe, but now, I prefer GF baking to demon wheat baking—you can play so much more with textures!

ha – I LOVE it – demon wheat – it’s so true. I’ve been gluten free more than a year, and Jason just joined me. For most things I’ve become pretty good at it, but these cookies are a new venture. Back to the drawing board, or my original recipe!

This was not a failure! Good grief those look beautiful! I made muffins one time and they are now referred to as “bug muffins”. I swear they tasted like what you would think a bug would taste like…gross! The flowers are beautiful…and my favorite kind!

Those look so yummy. I’m glad to know I’m not the only person who meets failure in the kitchen sometimes. Tonight I made my husband waffles for supper and he could barely eat them they had so many flour chunks. I’ve made waffles hundreds of times before but tonight was just an embarrassing fail.

Gosh, I LOVE you. I love that you salvaged what others would have thrown away AND picked up pretty flowers for your man. :) I remember baking a cake with my sister when we were younger and 3 or 4 minutes after we put the cake pan in the over, we looked over and saw the eggs on the counter. We actually pulled the cake out of the oven, back into the mixing bowl, added the eggs and back into the oven. The cake was perfect! I think it was a boxed strawberry cake with vanilla icing. Hahaha. :)

oh what gorgeous flowers! I use coconut flour all the time but it dries out pretty fast so now I use 1-2 tbsp of flaxseed meal or oil to keep it moist. That might help.
Those bare look fabulous, as always!!

yeah… I’ve tried that… things like banana and applesauce are good for butter / oil replacements. eggs really have to be a flax egg or the Ener-G replacer… at least as far as I’ve tried… :)

So glad I’m not the only one who has fails in the kitchen, especially when it comes to veganizing.

I tried to make muffins using my juice pulp one morning, and they were the most disgusting baked good I’ve ever seen or tasted. I mean, unsalvagable, completely awful.

Situations like that can really hurt a girl’s confidence! Glad you worked yours out!

HAA !! well I AM GLAD that I’m not the only one who has made something with juice pulp !! :D I tried to make granola bars with juice pulp – sounds like it’d be GOOD, right?? no. and you can probably imagine – since you’ve been there!!

You are a brave, brave soul…. Gluten free baking? OMG – not that baking by itself requires CHEMISTRY and PRECISION, but toying with the forces of the universe with other ingredients???????????

The finish products look yummy though, even though it started as a fail? Did you I read the post right?

What size baking pan this you use? 8×8?

My recipe fail was with coconut flour too. In the beginning when I first experimented with coconut flour, I thought you could just substitute it from any flour. NOT! I made muffins and they came out flat, crumbly and dense with gritty texture. AND they were white and never browned :( Major fail!!!

Even though they were coconut muffins, and I love anything coconut…I had to throw away the whole batch.

My family came home and smelled the great aroma from the baking. They wanted some but had to tell them it wasn’t any good.

I was starting out to make sugar cookie dough – for cut out cookies… using only coconut flour this time made it WAY TOO crumbly… so THIS was the success from the fail ! :) I used a 9×11 …
