Stuffed Pepper – Jacks!

I made stuffed peppers for Halloween dinner… and I turned the peppers into jack o’ lanterns!

I made a batch of my tomato spanish rice and added black beans. I know, I know… I have been on such a white bean kick lately, right?

The only reason I used black beans? Black and orange. Halloween. :D

What can I say, I’m festive!

This was my first stuffed pepper of the season. Jason loved them, so we will see variations!

We spent the evening watching scary movies. We live in a remote area with no street lamps. No trick or treaters visit our spooky street for treats!

OMG those peppers are the cutest! What a great idea! We didn’t really do anything for Halloween — but we did find out the sex of my brother’s baby via what gender costume my sister in law was wearing!! (it’s a girl!!!)

These are adorable!!! The expression of the last pepper is hilarious!

Jason was Obi Wan Kenobi, I was Princess Leia and we spent the weekend carving pumpkins, going to a costume party, making Yoda pizza and watching Ghostbusters :)

Those are adorable and look scrumptious! We went to a fabulous Halloween party at a Midtown loft Saturday night. Last night, we had a low-key evening with friends and a crowded bar and then a simple Italian meal. Perfection. Children in NYC trick-or-treat in bars. I’ve never seen anything like it!

I have never been to NYC during Halloween (although I have been to many costume parties there… Hmm…) that sounds crazy…

Oh my gosh, these are the cutest things ever!
We are going to try and come up to Portland soon! At the latest, we are hoping to come up on November 30 as a post-birthday celebration (I’m turning 21… finally!). I’ll shoot you and e-mail when it gets closer and maybe we can try to meet up!

I love the peppers! So adorable:)) And that gummi bear – holy sugar! I ate a gummi that huge in the 6th grade and I haven’t been able to eat any such treat larger than my thumbnail ever since.

Very cute, I love it. Looks friendly and not scary like other Halloween designed food. I think I’ll still do this design even if it’s not Halloween.

We went to Disneyland on Halloween night, didn’t dress up though but it was still fun.
