butter toffee blondies

I love toffee. LOVE it. This was my first time making it. It is pretty easy, but there is one very important thing – you have to have patience. I don’t always have a lot of this…

Which is why I have two batches of toffee to show you. Well, one batch of toffee, one batch of soft toffee.

First batch, bubbling away!

This was about the time I figured it was complete. I took it off the heat and poured it onto my silpat, stuck in in the fridge. It tastes very good:

I wanted crunchy toffee. Round two, I found my patience:

butter toffee

1 cup earth balance
1 cup brown sugar
2 tablespoons vanilla

Melt the butter in tall saucepan, add sugar. Stir constantly as sugar dissolves and mixture bubbles up. (Here is where that patience comes in)… After a few minutes, the mixture will thicken and become smooth and glossy.

Pour onto a silpat or parchment sheet on a cookie pan, place in refrigerator.

Another thing I love? Chocolate chip cookies. Sometimes, I like the cookie part, without the chocolate chips. A blondie cookie. They’re good.

A gooey blondie sounded better, though, especially with butter toffee chunks.

I really need to just stop saying how surprised I am to make something that is both gluten free and vegan, and it tastes fabulous. :D

These? Taste fabulous.

butter toffee blondies

3/4 cup earth balance
1 cup brown sugar
1 egg (Ener-G replacer)
1 tablespoon vanilla
1 1/2 cups gluten free flour (Bob’s Red Mill ap)
1 teaspoon baking powder
butter toffee!

Cream together butter + sugar + vanilla, add egg. Add flour + baking powder, mix. Fold in butter toffee pieces.

 

Bake at 350 for 35 minutes.

Ooh. These look great. My all-time favorite cookies – it’s a tie between walnut chocolate chip and Italian lemon cookies.

blondies are my favorite, just below oatmeal raisin and snickerdoodles. But I think the toffee blondies here just might take an up on that!!

yep, I think I cannot have a blondie without toffee now… ;) I can basically only eat raisins if they are in an oatmeal cookie.

It seems delicious even to me that I don’t like toffees. They are too sweet for may taste! :P
My favorite cookies… well, this is a good question. I don’t know exactly because there are too many good cookies and from many traditions… Maybe the Italian almond cookies and the chocolate cookies are my favorite(put chocolate into something and make me happy!!!) but I’m not sure. You know, this is a good idea: one of my future recipes will be a cookie one so I can try to determine my taste about cookies! (always a good excuse to eat of course) :D

Um, yum. I’ve never had a blondie. I’m not a chocolate fan so I don’t care for brownies but have a sneaking suspicion I’d love blondies. I think I could go for one right now actually ;-)

Hi Anna! Earth Balance is a vegan butter substitute… and the one I use is soy free also. I love it !

Oh YUM! These look amazing :) I love it when gf baking works, there have been many times when it just hasn’t been ‘quite right’ in my kitchen. I’m definitely going to try the blondies very soon.

yum! As a kid who didn’t like chocolate, I always went for sugar cookies or snicker-doodles. Now, I’d likely grab a chocolate chip. I think oatmeal chocolate chip would be my favorite.

My all time favorite has to be the chocolate chip, but if I’m feeling a little sinful – I eat the triple chocolate cookie – chocolate cookie with chocolate chips and white chocolate chips.

Right now my favorite could be the butter toffee blondies if you ship some over! ;)

Yum…I love toffee!! Especially in blondies, that way chocolate doesn’t hide the toffee goodness. My favorite cookie is probably macadamia nut & white chocolate. :)

I tried to make cinder toffe twice last week for Bonfire Night, and both times it failed! (the first time took forever and then tasted burnt, the second batch was better but not right, and still tasted burnt!).

My favourite cookie would have to be chocolate chip (being British, and an oatmeal-raisin hater, that’s the only cookie I like!).

I think it’s a fine line of patience and timing… I took it off right as it turned slightly darker and was completely smooth…

These look delicious! And I don’t even care for toffee that much. I do like blondies, though.

I almost picked up some Ener-G replacer tonight. I’ve never used it, but always wish for it. Do you think it works much better than a flax egg?

I think my favorite cookies are chocolate chip peanut butter. I used to make this one recipe all the time, and everybody always loved it. But then I stopped using dairy in my baking and I have yet to try and veganize it. I need to do it asap!

Candice, the egg replacer is easier to me than flax… unless you have it for other things.. I haven’t always had flax to use, and this is easy… the box lasts a LONG TIME and it is easy!

you are not the first person who has said they don’t really care for toffee but these look good ! :) :)

that said, I need to bake something chocolate SOON !! :D

Did you know they have soy free earth balance now? omg, I have never ever purchased the regular one before because of the soy…but I saw the soy free the other day and loaded up!

I definitely hear ya on the patience part! I made a few batches of my pumpkin seed brittle and one was more chewy than crisp b/c I was sick of waiting for it to reach temp! But when you DO calm down and wait for it – so worth it!!

Looks amazing. I’ve never had a blondie either!!

My first attempt at toffee was a disaster because-as you said- I needed (and lacked)patience. Once I finally let the mix carmelize, it was heavenly! And now my go-to gift for home-made treats.

candy making is very precise, i.e. butter sugar boiling pot = need to watch it!
