red pepper grilled cheese

in Gluten Free,Vegan

Well, we didn’t complete the puzzle last night, but I’ll update with a photo when we do! ;)

In the meantime, I am celebrating the last day of Vegan MoFo with a crazy-delicious sandwich.

This is also a tribute and spin off of my Jalapeno Popper Sandwich, which was a big hit!

It is made the exact same way:

gluten free bread
roasted red peppers
earth balance
Tofutti Better Than Cream Cheese
vegan cheese

Melt 1/2 tablespoon earth balance in pan. Spread Tofutti on one slice bread, top with red pepper slices, vegan cheese slices and the other piece of bread. Cook in melted butter until golden on both sides, and cheese is melty.

It’s a good thing I bought gym memberships for Jason and I today… because I think there will be many of these sandwiches in my future. ;)

Random Question Tuesday! What is your favorite cake?

My favorite cake is either a golden from scratch or red velvet because they’re usually so moist. I almost never eat them but they’re a a great treat once in a great while.

thats the good thing about GF bread, it makes a very crunch and delicous panini!!
Favorite cake? not a huge cake fan but I don’t pass up strawberry shortcake. :)

Oooh, I love the idea of a grilled cheese with roasted red pepper!

Favourite cake = carrot cake. Without pineapple, raisins or nuts, but with LOTS of cream cheese frosting ;)

This is totally up my alley. I love red bell peppers. I think I could have this right now! As for cakes, not a cake person really. The only cake I have found that I like is an Italian Cream Cake. That’s what I used for my wedding cakes.

You and your grilled cheeses — they get me every time! I love red peppers and I’ve never thought to slide them into grilled cheese. YUM! Favorite cake? It’s a tie between classic boxed funfetti, and this amazing chocolate cake. One of the ingredients is mayonnaise!

Me too! Or zucchini cake. There’s just something about a vegetable-laced cake that makes my day.

Exciting about a new gym membership! Favorite cake – hmmmm. Probably strawberry shortcake. But I habe fond memories of baking yellow cakes with chocolate frosting as a kiddo with my sisters. Also used to like the chocolate cake with white frosting combo. AND strawberry cake with white frosting. OK, I’ll stop now. ;)

I love red peppers — this looks so good! And I love that you use Tofutti cream cheese. I think I’m the only person who buys that at my grocery store — it is always fully stocked (for me!)

I’m seriously considering making one of these! I’ve been missing cheese dearly, but the one time I tried vegan cheese it was, forgive me, mucusy. Gross!! I will try again!
