taco (salad) Tuesday

I love salad… and I’m going to join Lisa in her 20 Salads In December. :D

I was craving taco salad (actually, just craving crunchy iceberg!).


Despite the fact that I have a new knife that is SUPER sharp and sliced my thumb open, this was a quick dinner to make! Even making two completely different salads!

Can you guess which one belongs to whom? ;)

I found a new flavor of my favorite chips – these are SO good for taco salad!

yea for taco tuesdays!! Those are the best, especially the taco salad. Its a favorite in our household too.

Both salads look great but I would go with one like yours because of the baby corn. Love ‘em.

Lately I’m really into chick peas and avocados in my salads and they always have to include olives.

Ouch on the thumb. Hope it’s not too deep of a cut. I had thought about a taco salad last night, but soup won out! I love adding in crumbled tempeh and black beans.

yeek, it was pretty dang deep! I’m okay, though. Jason’s a good doc. Black beans (or any kind of bean…) is one of my favorite salad toppings… they were in mine, under the tomato + corns…

I have been having salads over the past few days using leftover cranberry sauce as dressing. Amazing :)
We also found a restaurant here in Corvallis that has a salad topped with a… wait for it… pumpkin pie vinaigrette. It is one of the best salads I have ever had!

I love throwing anything I have laying around into the salad. Latest favorites: spicy peppers and pickles. Yup! I also had some roasted butternut squash left from Thankgiving so that’s also going in to today’s salad at lunch :)

Oh no! Hope your thumb is feeling better! I love taco salads – probably my favorite topping is guacamole and/or black beans and corn. Okay, so I guess I have three favorites!

my salad had black beans in it, you just cannot see them… ;) and the mini corns I had are my favorite! :D

My favorite salad toppings are beans, banana peppers, feta cheese, and a new favorite – peas! I love salad bars at restaurants because I load up so many different things on there. I should get some of those things for home, too. :)

you had me until peas! ;) yes, that’s the reason I love salad bars too… but for the 20 salads this month, I can probably get away with having more toppings around!!

I was a little nervous to click on the pic, but phew it was covered! Was that a duct tape band-aid? classy:) Sorry you hurt yourself.

I love sliced thumbs, er almonds and onions on my salad. OOh and those cute cherry tomatoes.

ha, yep, I wonder how many will be brave enough to click… I am my Grandpa Z’s granddaughter… he used duct tape for everything, and it works! ;) yep, classy, too! I’ve downgraded to a regular band aid now… who am I kidding? it’s a glittery band aid. ;)

oooh, I get cravings for iceberg crunch, too! love Lisa’s 20 salads in December idea. I’ve been eating much heartier meals with so much running and cooler temps but I miss the crunch of a good salad. favorite salad toppings include avocado, hummus, walnuts, pepitas and chickpeas.

oh GOOD ! I know it severely lacks ANY nutritional goodness, but… it really can’t be beat for crunchy! I love salads as meals, so I think this challenge will be easy for us… as long as they have enough protein.

I’m going to try my best for the challenge! I had one for lunch today, so off to a good start. This is a great idea for the salad, but mine would proably look like the bottom one.

I’m glad the vegan month is over =) Back to real cheese and sour cream, which is what tacos are all about. I LOVE tacos!!

My daughter and I could literally have Mexican every night of the week and never get sick of it.

My store actually sells white corn tortillas for .99 cents for THREE DOZEN! So I make tons of tortilla chips for a dollar.

Just brush with oil, sprinkle with salt, bake at 350 for 12-15 minutes. so good!

We even made breakfast nachos with them over the weekend!
