coconut muffins

Back in college, Jason’s band opened up for Ween. I love Ween – I wish I had known him then! Ween is coming to Portland and Bend soon, and we are trying to get our hands on some tickets. They sold out fast.

These muffins are a new recipe for me, and I was very happy with how they turned out – fluffy and light. We each had one after dinner, and I ended up singing Ween’s Fluffy for the rest of the night. :D

These could also be frosted and called cupcakes, using a vegan buttercream and then dipping them into more coconut flakes.
If Portland gets more snow I’ll do this!

coconut muffins

3/4 cup coconut flour
1/4 tapioca flour
1/2 teaspoon sea salt
1/4 teaspoon baking soda
4 eggs (Ener-G egg replacer)
1/2 cup oil (grapeseed)
1/2 cup agave
1 tablespoon vanilla
1/3 cup coconut flakes, unsweetened
pecan halves, as tasty garnish, optional

Mix all dry ingredients. In separate bowl, prepare egg replacer. Add agave, oil and vanilla, combine. Blend wet and dry ingredients, add coconut. Spoon into prepared muffin tins/cups, 3/4 full.

Bake @ 350 for 12 minutes (mini muffins, makes 15) or 20 minutes (regular muffins, makes 8).

I doubled the recipe to make many mini fluffy muffins, and two mini fluffy loaves.

Oh, those are some gorgeous muffins and mini-loaves. (Note to self: Must get tapioca flour!) I know I would love them, as is, or topped with coconut. ;-)

I am ignorant of Ween, but hope you get tickets! Tell everyone you are looking and look everywhere and I bet you will find some. :-) I can’t say that I have a favorite band. I like many. I’d either play the guitar or the flute (the latter a la Ian Anderson for Jethro Tull).

I never got into Ween but the last time they came to town, they sold out really fast! They have a great following.

My favorite band is the Dave Matthews Band. I’ve seen them 29 times at this point, since 2001. I’ve seen them in over 10 states and have made lifelong best friends and even met a boyfriend because of them. The fan base that follows them around is absolutely wonderful and I am in love with them just as much as the band. Half the experience is tailgating and traveling with such wonderful people!

I’m also a huge Phish fan and have seen them 8 times thus far, with big plans for 2011.

I have a hard time with the favorite band question. But I would guess if you looked at my ipod, you’d see quite a lot of The Killers. They’ve yet to come out with a song I didn’t like…

I always wanted to be a drummer in a band. However, I have zero experience or talent on the drums. I am a pretty decent singer, so I guess that’s where I would probably end up. I’m not a fan of being the “name and face” of a band, though. Too much pressure!

I listen to a lot of hip-hop, and my favorite crew is Doomtree out of Minneapolis. Too much talent to pick a favorite member! And I would definitely play the drums. I have dated 5 drummers in my life, and my adopted dad of sorts plays the drums, and I just love percussion instruments in general!

Those muffins look great! And I am a HUGE Ween fan!! They are my favorite concert to date because I saw them in DC at DAR Constitution Hall and the show rocked my face off. Ahhhhhh I want to see them again!

I LOVE the mini fluffy loaves. So cute.

I’m not good at favorites, but Billy and I both have a love for Nirvana and The Doors! We know the lyrics to every.single.song. I like everything from classic rock to Josh Groban. Tee hee. I think I’d be a drummer or maybe play the keyboard/piano. Let’s start a band!

I haven’t thought about Ween in eons. I think I might like to play drums. How fun would that be to just beat on something for a couple of hours.

I was at that show when Jasons band opened up!! I have a funny story I can tell you about that night. Come to Bend to see Ween and bring your bikes! :) I love mini muffins! RIght now I think my favorite band is Elliott Brood from Toronto CA, but hey are nothing like Ween!

If I was in a band, I think I’d sing. I’m not so great with instruments. Although, I’ve always secretly wanted to play the drums!
