cheddar ale soup

In preparation for our Superbowl gathering, one of the details I am after is food that fits my theme (Green Bay Packers!). I also want some things that can be made earlier that day, leaving little to no work during the party. This fits both of those, and tastes great too!

Also? It’s cheese.

I made mini spinach pancakes as garnish.

cheddar ale soup

1/4 cup butter (earth balance)
2 cloves garlic, minced
1/2 onion, diced
5 stalks celery, diced
1/4 cup flour (Bob’s Red Mill gluten free ap)
1 cup almond milk
1 cup Youngs Double Chocolate Stout
2 cups vegetable broth
10 oz block Wisconsin cheddar, grated

In large pot at medium heat, melt butter, sauté garlic, onion and celery until softened. Add flour, stir until incorporated – this will start to thicken. Add almond milk, ale and vegetable broth, combine. Add cheese, combine.

At this point I poured the soup into my slow cooker and let it simmer on the low / warm setting for a couple hours.

this was my first time making it!! It usually sounds too rich / decadent to me, but after the photos I loaded up the bowl with broccoli, so it was GOOD !!

Thank You SO MUCH, Camille!! I’ve been working on them… and even though I am SO behind in my 365 project, I actually AM still taking photos each day, and I have a list of which photos go to which date.

Still trying to figure out 365 page after the big move… *sigh*

I’m in! I’ll definitely make that soup—it looks and sounds amazing!
No superbowl plans for me. I’m kinda looking at it as a day when everyone will be busy so I can get work done—and I’m pretty excited about that (did I just admit that?!).

oh YAY! definitely let me know how you like it… it was pretty yum! also, I just remembered, I was going to add brown rice to it… the downside of making up a recipe as you go… :D

that sounds great – a nice big chunk of a Sunday to catch up and get stuff done!! ENJOY !!

I’m not sure yet where we’ll watch the game, but we’ll definitely be watching! My vote is always to watch it at home and have some friends over. I love the comfort of being at my own home. Or your home. I’d come there. :)

We are definitely watching the Superbowl and I’m also rooting for the Packers.

Everyone is making soup lately! Yours looks super good, although I think I’d need to steam that broccoli for mine.

very cool! is ale like a beer? (i’m non alcoholic ;) ) I’ve had cheddar and beer soup once. It’s fabulous. And your’s looks wonderful. Especially with that nice spinach accent.

My husband and I aren’t football fans, so we have a tradition of going out to eat on Superbowl Sunday because restaurants are typically empty and it’s fun! lol

I swear I read this recipe 3 times before I found the ale—my eye kept getting stuck on “chocolate”, as if there could be any other words grouped with it!

yes. it is my first time making it. um, my original thought was to include some brown rice to bulk it up… totally forgot. good thing I had a salad and the spinach pancakes to go with…
