Today’s Superbowl eats posts are focusing on sweets.
These brownie bites have a fun and tasty surprise, though.
I used my fudgy pumpkin brownie recipe and my mini muffin pan.
Filling each muffin about half way, I push one mini Peanut Butter Ritz cracker into each muffin and top with more brownie batter, covering the cracker.
This made 48 mini bites of delicious.
Thursday afternoon share:

Oh my goodness… it’s like all my vices all rolled into one bite-size snack!
yep! salty and sweet is perhaps my favorite thing…
Decadence at the highest limit
*wipes drool
they are really tasty and fun!
And now I see what you were talking about. My husband would LOVE these.
see?? yes!!
do they have GF peanut butter crackers? If so, I need to make these!
I was just thinking the same thing, Linds!!!
Not really.
you could probably make a mini PB sandwich with Mary’s Crackers and PB and smoosh that in….but yeah, i dont think there are any pre-made PB sandwich crackers on the GF market
Lmk if i have missed any!
We could make full size muffins and use these Glutino crackers to make PB sandwiches to put in them!

thanks for that link, Christin! I will look for these next time… and yes, I won’t be eating too many of these sadly! (maybe I did it on purpose so I wouldn’t eat them all…)
I looked… I don’t think there are any. Sadly my guests will get to enjoy all of these!
yeah, Lindsay, sadly I won’t be eating many of these! I looked for gf and didn’t find any…
Great article. I just finished a post for tomorrow about the show. LOL
wasn’t it a good article?
I really liked it! the show is crazy funny, can’t wait to read your post!
Billy is such a big fan of Ritz crackers! But, since we’re GF this month, I’m baking some vegan GF brownies for his birthday tomorrow. I’m not telling the other guests…we’ll see how they like them.
I’m sure they’ll LOVE them! you cannot really go wrong with brownies. you’ll have to make him these some other time… *Happy Birthday Bee!*
That’s just crazy. And fun. Ritz! In a brownie! It’s just so odd, it must be good.
YES. this was my plan and exactly what I was thinking…
Geez woman, you can do no wrong!!!
ah, Thank You, my friend!
your new site is beautiful! It doesnt look that much different than your old site but just enough that it just shines! congrats!
and this recipe…genius!!!!!
i do that with Reeses PB Cups in brownies. I need to do it with a PB Ritz!!
Thank you Averie!! yes, I still like the look of my banner, I just added a few things to bling her up, and the small details that probably only I notice are what make me happy!
That’s just plain brilliant!
I love surprises!
Those look amazing!
I need to find something similar to the Ritz with PB – I’m allergic. Hmmm…
yes… I don’t NEED to eat gluten free because of an allergy, I just choose to as part of an anti inflammatory diet… I won’t be eating too many of these! Christin just linked to a gf cracker here –> http://www.amazon.com/Glutino-Gluten-Original-Crackers-Ounce/dp/B001CWV4PA and you could add your own pb and make a full size muffin.
What a great idea! I make all sorts of filled brownies… I should whip up a batch soon, it’s been too long.
Mmm, I’d love to see some of your brownies… what kinds of things do you fill them with??
Maybe some fruit… coconut… nut butters… oh the opportunities are endless! Brownies are fantastic, aren’t they?
ohhh surprise types of things! hehehe…. I’ll post it in a couple of weeks. I promise.
Ooooh my gosh. Simply epic!
All hail the Genius!!!!!
That is seriously fantastic. I never would have thought of that, but the saltiness and the PB with the brownie…ooooohhhh…..
YES… it is as awesome as you are thinking it is. *YUM*
Umm, this is GENIUS!!!
haa…. thanks, Tina!! they are pretty darn GOOD !!
Oh yum, such a great idea! I love peanut butter and chocolate combos – the salty ritz probably add that extra level of sinfulness!! Mmm
Oh my gosh, I am always trying to think of things to stuff into brownies! I LOVE those little cracker sandwiches. You’re the best.
making these as a last minute addition, Mark said we “need one more thing on this plate” for the party tonight! LOL
happy new year dear!
