surprise brownie bites

Today’s Superbowl eats posts are focusing on sweets.

These brownie bites have a fun and tasty surprise, though.

I used my fudgy pumpkin brownie recipe and my mini muffin pan.

Filling each muffin about half way, I push one mini Peanut Butter Ritz cracker into each muffin and top with more brownie batter, covering the cracker.


This made 48 mini bites of delicious.

Not really.

you could probably make a mini PB sandwich with Mary’s Crackers and PB and smoosh that in….but yeah, i dont think there are any pre-made PB sandwich crackers on the GF market :( Lmk if i have missed any!

We could make full size muffins and use these Glutino crackers to make PB sandwiches to put in them!

Billy is such a big fan of Ritz crackers! But, since we’re GF this month, I’m baking some vegan GF brownies for his birthday tomorrow. I’m not telling the other guests…we’ll see how they like them. :)

and this recipe…genius!!!!!

i do that with Reeses PB Cups in brownies. I need to do it with a PB Ritz!!

yes… I don’t NEED to eat gluten free because of an allergy, I just choose to as part of an anti inflammatory diet… I won’t be eating too many of these!
