appetizing

Our Superbowl eats included my Green Bay inspired Cheddar Ale Soup, my Buckwheat Basil Salad, surprise brownie bites and (oh yum!) apple cheese danish.

In addition, I had snacks. Veggies, chips and dips!

Here we go:

garlicy onion tofu dip

1 block extra firm tofu, drained
1/2 cup raw cashews, soaked
3 stalks celery, chopped fine
3 green onions, chopped fine
1 tablespoon mustard
1 tablespoon nutritional yeast
1 teaspoon rice vinegar
1/2 teaspoon turmeric
sea salt + pepper to taste

In food processor, pulse cashews into a paste. Add tofu, mustard, nutritional yeast, vinegar and turmeric, combine. Remove from food processor, add chopped celery and onion, combine. Salt + pepper to taste. Chill until serving.

dilly tzatziki dip

2 cucumbers, peeled and finely grated
2 cups Tofutti sour creme
5 cloves garlic, chopped fine
juice of 1/2 lemon
1 tablespoon fresh dill, chopped fine

Pulse all ingredients in food processor until blended. Chill until serving.

creamy pimento dip

1 cup raw cashews, soaked
1/2  jar pimento – 2 oz, chopped fine
8 ounces Tofutti creme cheese
1 clove garlic, chopped
sea salt, to taste

In food processor, pulse cashews into fine paste. Add garlic and creme cheese, pulse until blended. By hand, stir in pimentos and salt to taste. Chill until serving.

buffaleaux chik’n dip

1/2 package soy curls, rehydrated
3/4 cup Franks Buffalo Sauce
8 ounces Tofutti creme cheese
1/2 cup Tofutti sour creme
1 tube Teese vegan cheese, grated/chopped fine
5 stalks celery, chopped fine

Marinate soy curls in buffalo sauce while prepping cheese and celery. Combine all ingredients, adding more buffalo sauce to taste. Bake (covered in tinfoil) @ 350 for 35 minutes – stirring at 20 minutes.

I served all of these dips with lentil chips, awesome gluten free crackers (these are seriously SO good and my new favorite!) and veggies – broccoli, carrots and celery.

These plates were everywhere:

Of course my favorite marcona almonds made an appearance:

thanks Liz! it’s a perfect bowl for a party, especially if you have several bowls of the same dip going around… this one can have some of everything!

That pimento dip looks so good — well they all do! No party for us — we just ate chips/salsa and sat on the couch :)

I’ve made this dip without the “creme cheese” too… just cashews, garlic, maybe water… YUM!

OMG all of these deeps look amazing! Fun fact: Veggies are the #1 thing consumed on superbowl Sunday. Isn’t that fascinating?!?! When my professor said it today no one believed it.

that IS fascinating… I believe you, but it is incredible. my answer would have been wings (ew!). ;)

I want everything you just posted about!
…but especially the dilly tzatziki dip. Yum :)

I didn’t go to a super bowl party this year, in favor of staying home. I made lots of good stuff though—spinach artichoke dip, kale chips, and lentil burgers!

Mmm, kale chips! I ran out of time… I got out of the kale chip habit after the summer, when I make them for EVERY event we have here! :) I would much rather stay home and have everyone over to our house…

yummms! Love all your dip creations. Also, I love those crackers, too. They are amazing. Had them for the 1st time last summer and need to get some soon. Another thing – the lentil chips. I can’t get enough. Don’t leave me alone with an entire bag. Billy and I ate so much guacamole all weekend, but NO hummus, which is usually my go-to football watching appetizer. We’ve made up for it the past 2 days. :)

I am all about the garlicy onion tofu dip… do you think it’d work if I replaced the tofu for 1 potato and extra cashews? I try to limit my soy by saving it for very, very special occasions… but wasn’t if a potato and cashews would totally ruin the consistency.

PS: if we were neighbors I’d totally crash your party. yum!

if we were neighbors, you’d be invited! :D I know what you mean about soy… I don’t like too much either. it would be a little different consistency, but I bet a mashed potato would be GREAT in this! or you could just do extra cashews, all cashews… again different consistency, but I have made MANY cashew dips and spreads and they are awesome. add water, lemon juice, other liquid to thin. let me know if you try it!!

Gosh, what I would do to live in Portland. So beautiful!

I’ll give it a go in a couple of weeks and let you know – it’s been added to my “to be made” folder. Still haven’t forgotten about the brownies … I tested a new recipe on Monday and wasn’t 100% happy with them, one more go and I think they’ll be set!
