I have an important meeting coming up, and it is entirely appropriate that I am bringing my cacao truffles along for extra shmoozing abilities. I have had rave reviews for these, so I have a feeling they’ll help me.
cacao truffles
1/2 cup raw cashews, soaked overnight
1/4 cup maple syrup
1/4 cup cocoa powder
1 tablespoon coconut butter
1 teaspoon vanilla paste
2 tablespoons cacao nibs
Pulse cashews in food processor until fine – add maple syrup and process until creamy. Add cocoa powder, vanilla paste and coconut butter and process again. Cool in refrigerator until firm – roll into 3/4 inch balls and coat with cacao nibs. Plate and serve with caramel sauce:
caramel sauce
1 teaspoon lucuma powder
1 teaspoon maple syrup
Blend together until lucuma is dissolved.
Drizzle over cacao truffles and enjoy!

Love this. I have nothing to schmooze with! I love to make banana bread with chocolate chips because it’s a childhood weakness? Do you think people would be impressed? Probably not as much as with cacao balls!

These look great! What is vanilla paste? Something you order or just a paste made out of the beans?
I can’t say I have a signature dish, but I do have a few go-to’s depending on what type of crowd I’ll be around.

For parties and such I usually make guacamole — it is always a huge hit. But for treats I usually make plain jane choc chip cookies — who doesn’t love those?
I would request these again and again too. Yum!

ANYWAY, I used to make chocolate truffles a lot for Christmas (coming from not having an oven for around 8 years, so no cookie baking), and it has become quite a tradition that I give chocolate truffles. I used to make less sophisticated ones, though, but recently I’ve been thinking about daring to conquer new territory. So this post just comes in time, because *Easter is approaching*! *dances happily*

thank you, Katie!! perhaps a smaller amount of oil… butter or a butter substitute, even a nut butter would work, it will taste a bit different but still delicious.

OK, my go-to dish isn’t nearly as pretty as yours…and keep in mind I’m southern. I usually bring homemade pimiento cheese with pita chips. However, I use choppe roasted red peppers instead of pimientos. The key to making it really yummy is grating your own cheese, using a really good sharp cheddar. My friends get upset if I show up with anything else.

My signature is a matcha opera cake or else a raspberry chocolate cake… but I have to say, there’s something SO appealing about round food. Your truffles look fab! The raw cashews intrigue me to no end—do you *taste* the nuttiness?
I love round also!! matcha opera cake… oh, YES please! and I’ll take a slice of the raspberry chocolate also… do you like cashews? if so, you should try something like this… the flavor definitely comes through, even with the garlic and other flavors, and it’s creamy and nutty. fabulous, really!!
