Back again for another What I Ate Wednesday! These are fun.
First up, a simple smoothie – spinach, Amazing Grass Lemon Lime, almond milk and banana.
After my morning weights workout, I could barely lift my (heavy!) pan to make an egg. Somehow I did it:
Two fried eggs over salad greens. The runny yolk was the dressing!
Lunch was a cheese sandwich – tofutti cream cheese, Tillamook Colby Jack, ketchup – melted in a skillet.
Afternoon snack was Black Cherry Chobani and 5 tablespoons hemp hearts. One of my favorite snacks!
Jason is making dinner tonight, and until then, one of these is holding me over:

Runny yolk dressing? Genius! I’ve done this as the “sauce” on savory oats, but never thought about it with salad greens. Definitely trying this out soon.

Fried eggs on salad!? I’m definitely gonna do that. I love getting veggies in the morning. But when I make this, husband will surely roll his eyes and claim that I’m being too healthy. Whatevs.
ha! too healthy! ah, well… it’s delicious! so SO delicious! I like having salads for breakfast too…

I have yet to find the Black Cherry Chobani. It looks devine. What a deliciously healthy day! What did Jason make for din din?
Chobani sent it to me… although I heard it was the one flavor out of the three new ones (+ mango + lemon) that is actually available somewhere in Oregon… if I find it I’ll let you know!
That smoothie such a vibrant green! And I love the idea of yolk as dressing.
it’s so good… Jason is always grossed out when I do it, but … it’s not for everyone! I tell him I’ll never make it for him!
That is one green smoothie! Now I can’t wait until breakfast.

Eggs on salad greens!! Smart you! I would not have thought of that, but seeing the photo makes me want to do that myself. Seriously, it looks great! And the cheese sandwich too.

just spinach! believe it or not, all I use to “edit” my photos is iPhoto… so basically cropping! ha!
Once again, BEAUTIFUL photos of your food! Seriously! Love the color of the smoothie- you know it’s got some vitamins and minerals in there.

At first I thought you juiced a banana and was going to ask how the heck you managed that-but it’s a smoothie, makes much more sense!
ha! I had a conversation just tonight about juicing a banana – I’ve never tried, but I know there are people who have! I can’t imagine it would produce anything?
