While we are experiencing brighter and longer days, they are still very cold. Cold weather = warm soup. This soup has another layer of warmth with the hint of peppers. Yum.
asparagus pepper bisque
dairy, soy, and gluten free, vegan
splash olive oil
1 yellow onion, chopped
3 stalks celery, chopped
2 handfuls fresh spinach
1 pound fresh asparagus, chopped
1 cup juice from bell peppers (3-4 peppers)*
1 cup vegetable broth
1 1/2 cups cashews, soaked for 1 hour
pepper and sea salt, to taste
*sub vegetable broth if preferred
Sauté onion, celery, asparagus and spinach in olive oil. Add juice and broth, simmer until asparagus is tender. Transfer to blender (in batches if necessary), add cashews and puree on high until smooth. Return to pot to keep warm. Season with pepper and salt.
Garnish with asparagus tips when serving.
Enjoy!

What is with this cold weather? I’m done with winter
Always with the to-die-for green foods! This is 100% my kind of soup… with several kicks of hot sauce, of course. Thanks for the idea, Kristina!
Looks wonderful. What a gorgeous color!
I love the bright green color of this soup! It looks perfect for late winter/early spring
Gorgeous green! I wanted to lick the bowl. I’m in awe of your photos and culinary skills as usual!! What a gift!!
My mom and I ordered asparagus soup at a restaurant – and were surprised when it came out cold – neither of us liked it, but we took it home and heated it up – delicious!
You just reminded me that I wanted to recreate that at home – now I don’t have to – I’ll just steal your recipe
Have a great weekend!
I’m not a fan of many cold soups… glad you warmed it and made it better!

Whitney
Thanks, Whitney! I love vibrant foods!
Love the bright color in this! I love this recipe, because I always find myself grabbing a bundle of asparagus at the store this time of year, when it’s in season. But one can only enjoy steamed asparagus for so long.
I’ll have to give this a try!
yes – try it… YUM. I rarely steam asparagus anymore… I roast it usually…
You can ship somma that directly to my mouth, kthx.
yea, baby. I would if I could!!

You are welcome to join in my food blogger event THE SOUP KITCHEN, here all bloggers are welcome, hope to see you participate soon.
my new favorite soup, love the pepper addition.
nice photo
Found this recipe through Gojee. I didn’t realize it was vegan until I finished making it. Yum! This is officially going into regular rotation. Who says vegan food tastes like shredded cardboard? (Well, I did, actually. Happy to be wrong.)
Thank you for sharing this recipe! I’m making it for the 3rd time in just over a month since I found your website. My family all loves this and I’ve shared it with many friends who love it as well. The only thing I do differently is use a full pepper chopped and sauteed with the other veggies plus more broth to make up for the pepper juice.
