So while I have been having a great time with my recipe testing gig, I have also been working on perfecting a few of my own.
One of them?
Oh darn, that means we have to get to eat more pie! This time around, I made single serving pies, and made them savory.
sage, butternut & bean pie filling
makes 6 pies
1/2 butternut squash, cubed
7-8 sage leaves
1 cup pinto beans
olive oil
herbes de provence
garlic gold nuggets
Brush squash and sage leaves with olive oil, roast at 375 for 25-30 minutes. Let cool, then chop / mash the squash into smaller pieces and chop the sage leaves. Combine squash, sage and beans, divide equally between half of the pie crust rounds. Top each round with another, pinching edges to seal. Brush with olive oil and sprinkle with herbes and garlic. Bake at 350 for 25 minutes.
Serve atop salad greens.
Do you like savory pie? What are your favorite flavors?

those are the cutest pies Ive ever seen! I call that a pretty successful dish. I love savory pies. Well done my friend. GORGEOUS!
Oh very cool idea. I guess I’ve never really had a savory pie unless you call a quiche a pie.
These are so pretty!!! What a beautiful meal!
Those little pies are so adorable. I don’t think I’ve ever had anything like that before.
As far as pie goes, I’m a sucker for fruit pies, but also chicken pot pie
Whoa! Those look delicious Heather!!
Um. Yeah, I meant Kristina. Sorry, I was looking at Heather’s name in the comments section when I wrote this;)
Wow these look so cute and SOUND delicious!! Yum!
These look and sound awesome!
They would be perfect for a fancier meal, me thinks
mayday mayday, I can’t find your recipe for the pie crust:)
I’m basically part hobbit, so I of course LOVE savory pies. SO so so much! I used to work at this cafe (Sydneys, rest in peace!) and our baker made these gluten free turnovers, basically like a pie but hand-held. Sooooo yummy!
ha to the hobbit!
these could work as a hand pie, too!
Oh, yummmmms. Butternut squash and pinto beans? What a delicious combination. Savory pies remind me of meat pies which reminds me of Sweeney Todd, which then reminds me of Johnny Depp. Happy Friday! There’s my train of thought for you.
still loving this comment… <3
oh my! What cute little things they are but love that they’re savory and seem like the perfect size and meal.
thanks!
they were perfect size!
After the empanadas I had last night these are right up my alley!
Mmm, empanadas from where? (I’m behind in my reading…)
have a fabulous weekend, Lisa!
I don’t think I’ve ever had a savory pie. I went gluten free right around the time I was introduced to eating real food instead of boxed take out crap, so I’ve never tried to make gluten free pie anything. I need to get on that!
you really do… even my first gf pie crust was good, it just took a while to “come together”… but it can be done!!
Yum. That’s all there is to it. Yum.
Made those figgy brownies- ooooooh mama! I made some minor changes and will blog them on monday but YUM to those too. Yours were much prettier though. lol
oooh, I can’t wait to see your version! have a great weekend, Lori!
Wow another amazing recipe! I haven’t had many savory pies (maybe a chicken pot pie or two when I was a kid—out of a box!). Your version of the savory pie sounds amazing
thank you, Lisa! I’m thankful to say I’ve never had one of those chicken pot pies…
I love butternut squash, so this is an awesome idea! I’m a sucker for savory casseroles and pies! I’ll have to try something like this – I just never think of being this creative until I see it on somebody else’s blog!
oh, Christina, that is not true – you’re so very creative!!
I need to make more casserole, though. that’s where I’m not creative!!
That sounds amazing! I want!!!! You got skills, girlfriend!
thanks, girl! they’re pretty good…
I do a lot of pot pies here. Mushroom with rosemary is my favorite. This sounds so good. I need to do the mini kind, the boys would think it’s fun.
everyone likes the minis!
I’m so not into savory pies! Reminds me of filo pastry stuf with chicken fricassee filling. Gah. Yours look good, though. No filo. No fricassee. BUT LOTS OF SQUASH.
nope, I don’t know if I’ve ever liked phyllo… and I know I’ve never liked chicken… what IS fricassee??
Fricassee is a kind of stew from usually chicken and vegetables in a white, creamy sauce. The typical German version is chicken with asparagus and peas (sometimes also mushrooms and carrots), served with (parboiled) rice.

Too bad you don’t like chicken. Well, I don’t like chicken fricassee (I think the sauce is rather icky and bland), but chicken is one of my favorite foods. Only without skin (yuck), though. I’m difficult with food.
I may recreate this dish in a flour and milk free way …
hmm… not a fan of PEAS either, so I’ll steer clear of the ol’ fricassee, methinks!
beautiful photo, though!
and about that chicken… I just don’t know… just not a favorite.
If I squint when I look at these, I can imagine they’re sage-butternut-stuffed pasta, and I’m about to have an Italian feast to die for! Nothing against pie, but handmade butternut-stuffed ravioli is definitely a fave over here.
Boy, I wish I lived closer to you…
ah, I do too!! and I’d have you over for dinner! butternut ravioli is SO good… I have ravioli on my list to tackle…
I have to make these! They butternut and bean mixture sounds delicious, they make me think of empanadas, only they’re circular!
yep – I was going to make empanada shape – circular was more fun!
Woah!! Those look amazing!! Gorgeous meal!
thank you SO much, Paije!
Kristina! These look so so good! I’m coming to your house to eat
come on over, Andrea!!
SO GREAT!! I love the sound of these, will be making for the holidays, sounds perfect.
oh wow, so pretty! I love a sage and butternut combo.
butternut and sage, a perfect combo! do you have other butternut recipes?
hi Matt and Mark!! I do have a few other butternut recipes, my latest is this soup –> spicy chipotle butternut soup
do you think these would be good with turkey added? I want to make some kind of pie with my leftovers.
I’ve never been a big fan of turkey, so I’m not sure about the flavors together? sage, for sure would be good, it’s the squash I’m not sure of?
Hubbs made these for me today and it was divine!! What a great and easy-to-follow recipe! Thanks!! I think he used pastry sheets in the fridge, so prob not GF, but easy!
oh, great – so happy to hear you loved them! and yes, use what you have, pastry sheets sound fantastic. thanks for saying hello!
