sage butternut pies

So while I have been having a great time with my recipe testing gig, I have also been working on perfecting a few of my own.

One of them?

Gluten free pie crust.

Oh darn, that means we have to get to eat more pie! This time around, I made single serving pies, and made them savory.

sage, butternut & bean pie filling

makes 6 pies

1/2 butternut squash, cubed
7-8 sage leaves
1 cup pinto beans
olive oil
herbes de provence
garlic gold nuggets

Brush squash and sage leaves with olive oil, roast at 375 for 25-30 minutes. Let cool, then chop / mash the squash into smaller pieces and chop the sage leaves. Combine squash, sage and beans, divide equally between half of the pie crust rounds. Top each round with another, pinching edges to seal. Brush with olive oil and sprinkle with herbes and garlic. Bake at 350 for 25 minutes.

Serve atop salad greens.

Those little pies are so adorable. I don’t think I’ve ever had anything like that before.

As far as pie goes, I’m a sucker for fruit pies, but also chicken pot pie :)

I’m basically part hobbit, so I of course LOVE savory pies. SO so so much! I used to work at this cafe (Sydneys, rest in peace!) and our baker made these gluten free turnovers, basically like a pie but hand-held. Sooooo yummy!

Oh, yummmmms. Butternut squash and pinto beans? What a delicious combination. Savory pies remind me of meat pies which reminds me of Sweeney Todd, which then reminds me of Johnny Depp. Happy Friday! There’s my train of thought for you. :)

I don’t think I’ve ever had a savory pie. I went gluten free right around the time I was introduced to eating real food instead of boxed take out crap, so I’ve never tried to make gluten free pie anything. I need to get on that!

Wow another amazing recipe! I haven’t had many savory pies (maybe a chicken pot pie or two when I was a kid—out of a box!). Your version of the savory pie sounds amazing :)

I love butternut squash, so this is an awesome idea! I’m a sucker for savory casseroles and pies! I’ll have to try something like this – I just never think of being this creative until I see it on somebody else’s blog!

I do a lot of pot pies here. Mushroom with rosemary is my favorite. This sounds so good. I need to do the mini kind, the boys would think it’s fun.

I’m so not into savory pies! Reminds me of filo pastry stuf with chicken fricassee filling. Gah. Yours look good, though. No filo. No fricassee. BUT LOTS OF SQUASH. :D

Fricassee is a kind of stew from usually chicken and vegetables in a white, creamy sauce. The typical German version is chicken with asparagus and peas (sometimes also mushrooms and carrots), served with (parboiled) rice.

Too bad you don’t like chicken. Well, I don’t like chicken fricassee (I think the sauce is rather icky and bland), but chicken is one of my favorite foods. Only without skin (yuck), though. I’m difficult with food. :D

hmm… not a fan of PEAS either, so I’ll steer clear of the ol’ fricassee, methinks! ;) beautiful photo, though!

and about that chicken… I just don’t know… just not a favorite.

If I squint when I look at these, I can imagine they’re sage-butternut-stuffed pasta, and I’m about to have an Italian feast to die for! Nothing against pie, but handmade butternut-stuffed ravioli is definitely a fave over here.

I’ve never been a big fan of turkey, so I’m not sure about the flavors together? sage, for sure would be good, it’s the squash I’m not sure of? :)

Hubbs made these for me today and it was divine!! What a great and easy-to-follow recipe! Thanks!! I think he used pastry sheets in the fridge, so prob not GF, but easy!
