simple breakfast stir fry

Happy Saturday!!

I am in a dopey benadryl haze today, so I’ve spent the morning alternating listening to new music on my iTunes, and watching movies with Jason and Basil.

I also made a simple but perfectly tasty breakfast. One that will become a template for many meals in the future.

simple breakfast stir fry

serves one

2 eggs
2 cups fresh broccoli
1/2 red bell pepper, chopped
1/2 cup cooked quinoa
garlic infused olive oil
sea salt, to taste

Heat olive oil in skillet on medium high heat. Add broccoli, pepper, quinoa and sauté. Add eggs, continue to cook until eggs are done.

Okay. That took me way too long to type – and now I am hearing Jason tell me that the benadryl is a last resort, but he could see I needed it this morning. I had no idea it would have this result, but now I suppose I just roll with it, right?

My to-do list will be there tomorrow, and those movies aren’t going to watch themselves!

I am declaring a rest and relaxation day!

The only thing I may accomplish is making more of these.

We finished them with breakfast.

I love adding everything to eggs, whatever left overs I have, I add to my breaky eggs! SO FUN!!

I’m writing a research paper (as you can tell!) and I just made salad rolls!! WOO HOO!!

Looks amazing (including the brownie!). I had a huge green smoothie today, and also cheezy kale…yours looks better! No big plans this weekend besides working and working out. Staying inside to enjoy the sun (it’s actually out, but it’s about 17 degrees out there!).

I ran 9 miles, then went to a bridal shower. I was so exhausted that I just now woke up from a 3 hour nap. I love Saturdays!

haa… that’s what Jason said… I was afraid I’d just full on PASS OUT ! Jason had a good time post-benadryl diagnosing –> “you may not feel better, but you don’t care now” :D

Get well soon, lady-o! Your breakfast stir-fry is pretty close to what I’d call my breakfast fritatta, right down to the lovely red quinoa, though I usually stir fry a whack of veg, pour the eggs and some milk in, and pop it in the oven to let it set.

And now, I’ve decided what to make for my brown-bag lunches this week!

I’ve never made a frittata… I should, I know I’d like them… kind of like a quiche, which I LOVE! how goes things? now it’s ME who feels like I haven’t seen YOU around… (and probably because I haven’t been??) :D hope all is great, my friend!!

I always associated veggies with lunch and dinner–never breakfast. But then my boyfriend made scrambled eggs with spinach and feta and I was sold. I’ve even done broccoli in scrambled eggs! Yum!

We hiked Multnomah Falls today!

That breakfast looks delicious! I don’t eat enough veggies…vegifying breakfast is a great idea. I hope that you feel better soon! In the meantime, just roll with your benadryl-induced high.

That looks so colorful and tasty! I also like the little sage pies… so cute! I haven’t been inspired in the kitchen lately, but your pictures make me want to go in the kitchen and get creative! :)
