Happy Saturday!!
I am in a dopey benadryl haze today, so I’ve spent the morning alternating listening to new music on my iTunes, and watching movies with Jason and Basil.
I also made a simple but perfectly tasty breakfast. One that will become a template for many meals in the future.
simple breakfast stir fry
serves one
2 eggs
2 cups fresh broccoli
1/2 red bell pepper, chopped
1/2 cup cooked quinoa
garlic infused olive oil
sea salt, to taste
Heat olive oil in skillet on medium high heat. Add broccoli, pepper, quinoa and sauté. Add eggs, continue to cook until eggs are done.
Okay. That took me way too long to type – and now I am hearing Jason tell me that the benadryl is a last resort, but he could see I needed it this morning. I had no idea it would have this result, but now I suppose I just roll with it, right?
My to-do list will be there tomorrow, and those movies aren’t going to watch themselves!
I am declaring a rest and relaxation day!
The only thing I may accomplish is making more of these.
We finished them with breakfast.
What are you doing today?

Hope you feel better! For being in a haze, that breakfast sure looks flippin’ amazing!
ha… perhaps that’s WHY?
maybe I need to HAZE COOK more often… !!
Love the bfast stirfry idea-what a way to start your day with some veggies!!!! I hope you feel better asap!!!!
thanks, K – I’m feeling better… it’s crazy allergies and I haven’t had time to ramp up my bee pollen intake… hope all is fabulous with you!!
I love adding everything to eggs, whatever left overs I have, I add to my breaky eggs! SO FUN!!
I’m writing a research paper (as you can tell!) and I just made salad rolls!! WOO HOO!!
I have a feeling I’m going to be experimenting more with scrambles… I LOVED this one…
Looks amazing (including the brownie!). I had a huge green smoothie today, and also cheezy kale…yours looks better! No big plans this weekend besides working and working out. Staying inside to enjoy the sun (it’s actually out, but it’s about 17 degrees out there!).
ha – that’s what our days have been like – they LOOK beautiful and sunny, but are still WAY cold! later this week we are expecting 60+ though, YAY!
That scramble looks terrific. Hope you feel better, cuddling with Jason and Basil sounds like a perfect way to spend the day
I had a Pittsburgh blogger meetup today and heading to a casino and midget night at a bar tonight, woo hoo!
that all sounds fun… but um… midget night?? if I catch up on my blog reading, will this question be answered??
I ran 9 miles, then went to a bridal shower. I was so exhausted that I just now woke up from a 3 hour nap. I love Saturdays!
that sounds like my day too holly! Phew!
I love nap!
is that a scramble? Oh yummy. Probably good for the dopey medicine phase. If it doesn’t get any better, I say whip out the mimosa’s! haha.
haa… that’s what Jason said… I was afraid I’d just full on PASS OUT ! Jason had a good time post-benadryl diagnosing –> “you may not feel better, but you don’t care now”
Oh no…benadryl can never be a good sign. Breakfast looks good at least. For some reason, I can’t find red quinoa lately.
I thought of you today… I saw red in the bulk bins… let me know if you need some Portland Quinoa sent out…
I may have to take you up on that! Can you believe WFs still doesn’t have it? And I can’t find it at our local chain (Kroger). Humph…
I’m a huge lover of stir fries, and starting my day with one would be perfect!
yes! I think this is like, the THIRD stir fry I have EVER made, if even that? after this one, though, that all changes… LOVE it!
Get well soon, lady-o! Your breakfast stir-fry is pretty close to what I’d call my breakfast fritatta, right down to the lovely red quinoa, though I usually stir fry a whack of veg, pour the eggs and some milk in, and pop it in the oven to let it set.
And now, I’ve decided what to make for my brown-bag lunches this week!
I’ve never made a frittata… I should, I know I’d like them… kind of like a quiche, which I LOVE! how goes things? now it’s ME who feels like I haven’t seen YOU around… (and probably because I haven’t been??)
hope all is great, my friend!!
I always associated veggies with lunch and dinner–never breakfast. But then my boyfriend made scrambled eggs with spinach and feta and I was sold. I’ve even done broccoli in scrambled eggs! Yum!
We hiked Multnomah Falls today!
Hope you feel better…
right?? *SO* good!
I have not hiked the falls in FAR TOO LONG. need to remedy this…
Girl! Breakfast needs to be sweet in my book! I’d make your stir fry for lunch instead
P.S. Benadryl is the devil…LOL!
yep – perfectly good for lunch or dinner! girl, you speak the truth!! benadryl IS the devil!
That breakfast looks delicious! I don’t eat enough veggies…vegifying breakfast is a great idea. I hope that you feel better soon! In the meantime, just roll with your benadryl-induced high.
when I wanted to UP my veggies per day I started eating salads for breakfast… now this is a new one I can add – I love it!
I love the idea of adding quinoa to your breakfast stir-fry. Very creative!
Feel better!
thanks, Heather… of course I feel better, the weekend is over!
ha! the quinoa stir fry has been made again… and it will be made… again and again!
That looks so colorful and tasty! I also like the little sage pies… so cute! I haven’t been inspired in the kitchen lately, but your pictures make me want to go in the kitchen and get creative!
Hope you feel better soon! Rest and Relaxation are the best ways to get better!
oh, I hope the inspiration was or will be fruitful… let me know what you make!
The stirfry looks insanely good. YUM!
thanks, Sara! it was…
I looove veggie breakfast scrambles like this!!!!! I make one a few times a month and never make it the same way twice! <3
this looks fantastic girl!
Mmm, it was so good… I made another the next day too… I do that – when it’s super tasty I become obsessed.
