What I Ate Wednesday

Hi friends! Back again for another installment of What I Ate Wednesday! Yep. I’m throwing you off again – yes, S, it’s still Tuesday… ;) for a few more hours.

 

I started my day with a lemon Chobani with homemade granola, blueberries and hemp hearts. On my way out the door, I brought along an amazing grass orange dreamsicle – yum.

This new flavor is good.

Lunch was a big salad and an egg scramble wrapped in a rice tortilla and baked. The scramble included spinach, mushroom, red pepper and a non dairy cheese.

Kept me full all afternoon – which was a busy one. Busy = we went out for sushi. :D

One of my favorite rolls – spicy tuna. I had a couple of these. Also several of these:

Pepper tuna. Oh so delicious.

That about wraps it up here! What are you eating today?

oooh. what brand of rice tortilla is that? it looks way better than the ones i’ve been using.

this one was a trader joes tortilla… I heat it on a skillet for a second to soften it, otherwise they tend to crack when rolling. :)

I am making overnight oats for tomorrow :) I just want to go to sleep so I can wake up and eat them!

Already had overnight oats with banana, cranberries and PB to start my Wednesday. I’ll have a wrap at lunch and not a single idea for dinner.

I haven’t made overnight oats in a while-must do that soon. (since I follow in your footsteps on almost all my meals, ha).

I am super jealous of your eats!

I’ve had PB on toast, a breakfast cookie (ala Fitnessista) and an apple so far (and its 8am) — I’m super hungry after a 7 mile run :)

I LOVE spicy tuna rolls! they’re my go-to. always.

It doesn’t matter how often I see pictures of other people’s sushi or how recently I’ve eaten it myself…EVERY time I see it I crave it. :)

I need to make sushi this weekend. I love making it from scratch so I can use quinoa + brown rice instead of the white stuff. Mmm… For today: smoothie, almond butter with apples + flax, granola + chia, bison burger, roasted veggies, 1/2 pear, way too many currants, salad with avocado dressing, cucumbers + hummus, kale chips + hard boiled egg + quinoa.
Mmm I can’t wait for that hard boiled egg waiting for me at home!

your eats always sound SO good! :) do you prepare the quinoa differently or add something to get it to stick as sushi? that sounds wonderful!!

I just mix 1/2 cup quinoa (usually white quinoa so the hubby can’t tell it’s in there) 1/2 cup short grain brown rice, 1 tbsp coconut oil, and 2.5 cups water in my rice cooker. That extra 1/2 cup of water makes the rice + quinoa a bit overcooked (not soppy though) and perfect for making sushi with! It’s not as sticky, but I don’t feel the stickiness is mandatory.

thanks!! I only thought about the stickiness as a binding factor… I have made sushi with brown rice before and it sorta falls apart… I’ll give this a try!

these were a trader joes brand, but I’ve seen them in regular grocers too… YUM!

How did you bake the tortilla – did you put something on top of it to smoosh it down?

heating it beforehand, I just heated on a skillet quickly and uncovered… then I filled it and wrapped it, just baked it on a sheet pan, nothing covering it. I baked for about 6 minutes, turned and baked another 5-6 minutes… just to get the tortilla a bit crispy.
