Did you know April is National Grilled Cheese Month? In honor of a month dedicated to grilled goodness, I had to resurrect a popular sandwich I made last November – the jalapeno popper sandwich. This is one of those indulgences that screams comfort food, even when vegan!
We make the vegetarian version often:
Mmm hmm.
Melt 1/2 tablespoon butter in pan. Spread cream cheese on one slice bread, top with roasted jalapeno, grated cheddar cheese and the other piece of bread. Cook in melted butter until golden on both sides, and cheese is melty.
Grated cheese melts faster, and helps melt vegan cheese:
I made it last year for Vegan Mofo using Earth Balance, Tofutti cream cheese and Teese vegan cheddar, and it is just as tasty.

Jalapeno grilled cheese is my fav kind! The hubs and I make it every spring/summer when our jalapenos start growing in the garden! love that you veganized it too! so fantastic!
I kind of want to keep making “original recipe” jokes but i worry your readers wont get our inside joke and ill be labeled a jerk. haha
we love jalapenos too… can’t wait for my garden this year… it frosted this morning, so still a bit early to start, but I hope SOON!

these sandwiches? yes, one of those things I thought YUUUUUM when I “came up with it” in my kitchen one summer, but when I see others do it I don’t think they stole it from me – again, such a non recipe and if I had this thought, you have to know HUNDREDS of others have too…

growing up it was one of the only things I would eat (picky girl!), so I had to pay homage! while I don’t eat them often now… it’s an indulgence we do enjoy… and I love anything with jalapenos!

I’ve yet to find a fake cheese that’s okay-enough. This looks so good!!
I was lucky enough to find Teese at our ONE fully vegan grocery… I had been wanting to try it for a while! I hear you on the fake cheese, it’s pretty difficult to find good ones, especially if you’re looking for good melting quality. to me, Tofutti cream cheese has such a great flavor, though!!

Oh man, there are few foods as comforting as grilled cheese. I would nix the jalapenos but cream cheese + cheese… love it!

oh, me too… I know that’s why I love Mexican food too… all the peppers! one of my favorite entrees is a chile relleno – YUM – pretty much a HUGE jalapeno popper!
Oh wow! This baby is bringing back some great summer cook-out memories! A friend of mine introduced me to his jalapeno poppers that had bacon wrapped around them…I bet this sandwich would be even MORE delicious with a few strips of some crunchy, salty goodness! Yum!

Delicious! Enjoyed one on a rainy day. Used a veggie peeler to make thin slices of the pepper, worked great!

This looks very good. I actually just made one the other day, but I roasted the jalapeños first because I think the bread is just as much crunch as I’d want in a grilled cheese (also, they taste better roasted, IMHO).
