mango coconut rice smoothie

This was last night’s dessert.

I have made a mango smoothie before, and it even had coconut water in it! This one, though, came from the brilliant mind of Nellie. Talking smoothies the other day, she suggested one that mimics my favorite Thai dessert, mango coconut sticky rice.

Heidi adds coconut butter to her smoothies, and I could not believe I’ve never tried that, it sounded amazing. This was a perfect smoothie to add it to!

I remember vividly the first time I had mango sticky rice, and how much I loved it. I would make it at home, and while I did get better, it never tasted as good as the restaurant. When I was living and working in the Pearl District, I would walk to Tara Thai just for the mango sticky rice. Several times a week.

Thai mango coconut rice smoothie

serves two

2 cups rice milk
1 cup coconut water
1 mango, peeled and chopped
1 tablespoon coconut butter
1/2 teaspoon cinnamon
shredded coconut, for garnish

Blend milks, water, mango, coconut butter and cinnamon until smooth. Garnish with coconut and cinnamon.

Nellie, when Jason and I go on our extended vacation and we get to park our RV’s next to each other, I’ll make sure I have the fixins for this. We can climb up to the roof, sit in the sunshine and drink our mango sticky rice out of straws!

Here’s something I don’t understand: You used mango for it, and it turned out *pink*. 8O (Why? How??) It looks great, though! :D

it was really more of an orangey pink… although the first one I made with mango a while ago was more white, I think it did have a slight orangey too… :D

… I can’t believe Holly isn’t a coconut fan!? In fact, I couldn’t imagine anyone not loving coconut. There’s this guy at my work that gags at the thought of coconut. AH! I love it to pieces. I’ve never had mango sticky rice… but I bet I’d LOVE it! Your smoothie looks so beautifully delicious. I love adding mango to my smoothies (with raspberries)

I understand it… I love the flavor, but the texture I am MEH about… I bet you would LOVE the mango sticky rice – if you find yourself in a Thai place, LOOK for it!!

I NEED this! I really need to get some coconut butter. I’ve never had it before. How is it different from coconut oil? I love coconut flour, I bet that would be good in there too. I am such a fan of coconut!

coconut butter is kinda like the TOP of the oil, before you stir it?? :) it’s just a thicker consistency – similar flavor. coconut oil will work too! and YES to coconut flour!! I love that too.

Funny story… I had never heard of the Pearl District till the other day… apparently it’s a more affluent part of town? I had a young gay male customer on the phone tell me that the only reason he drives to the Pearl District to go to the gym is so he can pick up older rich men! ;) I DIED laughing!! We had a pretty good rapport built up, but that was the last thing I expected him to say!

I’ve had an aversion to coconut since I was a kid. It was the texture I didn’t like, and then it manifested into “I don’t like coconut”, but the truth is that I love the flavor of coconut. (I haven’t eaten candy in years, but I put down pounds of coconut jelly bellies in my day.) I think I would love this dessert smoothie. :)

*WANT* How creamy and tempting! I had a mango lassi once and I did not like it, but the problem was the yogurt and not the mango, so I’m looking forward to going home and trying your yummy smoothie!

These pictures are so pretty and fun! When we lived in Thailand, I had to resist getting mango and sticky rice every day – too much sweetened condensed milk and white rice isn’t a good thing, ha! It was so good though, and now you have me seriously craving it.

Can I get a woot woot!?! Girlfriend, just SEEING that smoothie made my day! Not to mention the ego boost associated with inspiring that concoction :) What? Try to be more humble? Humility is overrated. Ha!

Now, just to warn you, you better start working on Jason NOW to get him to agree to converting the RV shower into a big refrigerator…because you will die when you see how small the standard RV fridge is. Don’t get me started on the pantry size :/

thanks for the heads up!! we are seriously talking about doing a ‘test run’ this summer or sometime soon, taking just a week or two and renting an RV, just a trip around Oregon… to get an idea of what it might actually be like! if we were to really do a few months of this (Jason is talking about BUYING an RV!!) I could use ALL the advice you’ve got!! :D

I seriously need to find a Thai restaurant STAT! Mango sticky rice? Sounds heavenly…as does this smoothie!! I love the cute little straws too! I can’t help but picture you and your man sitting across from each other sipping from the same glass through your cute little straws! Haha!
