Happy Cinco de Mayo!
Last Cinco de Mayo we were in Austin, hopping around from Opal Divines for breakfast and lunch, dinners of barbecue or Torchy’s, May fifth margaritas at Chuy’s. I would love to be in our friends backyard right now, sitting around the chiminea, talking and laughing. Soon enough, soon enough…
Remember those red pepper sweet potatoes I made last week? This is the recipe I made them for!
spicy black bean sweet potato enchiladas
corn tortillas
quinoa
black beans
mashed red pepper sweet potatoes
green enchilada sauce
Fill tortillas with potatoes, then quinoa and beans. Roll and line up in baking dish. Pour enchilada sauce over top, cook @ 350 for 35-40 minutes, until warmed through and bubbly.
These have some significant heat to them – I topped mine with slices of cool avocado – perfect.
Are you celebrating Cinco de Mayo?

I think I need this right now please. YUM. I love the combo of black beans and sweet potatoes. I like the addition of the quinoa as well. Nicely done!
thanks, Heather! I kinda thought you’d like this one, reminds me of something you would make!
Those look so good! I’ve never put quinoa in a dish quite like that!
I’m kinda going quinoa – crazy lately.
but I’ll be doing this one again!
I didn’t realize unti now that it’s Cinco de Mayo, but maybe we’ll celebrate tonight with some drinks and some fun food.
I absolutely love the combination of black beans and sweet potato, and have made quesadillas using that combo, but I haven’t tried it with enchiladas. Yum.
I love black bean + sweet potato too – and adding quinoa to it is just perfect!
These look so good Kristina!!!
We aren’t really celebrating tonight — I’ll make us margaritas but that is about it!

No celebrations for me, I work all day and as soon as I’m done, I have to drive 45 mins to do a 3 hour class, then back home and to SLEEP!!!
girlfriend, you know I’m all about easy recipes that are full of flavor!
Saucy, I love the idea of sweet potato enchiladas! I am definitely celebrating—my eating Mexican at every meal! I’m also going to meet some friends for margaritas later on but until then it is just a normal day.
ha – yes, I have definitely taken advantage of Cinco de Mayo to um, eat Mexican all week long!
Cheers, hope you’re enjoying margaritas right now!
That looks DELICIOUS!
thank you, Lisa!
I love the quinoa stuffing. YOure on a roll with the quinoa usages!
I know – I have a quinoa theme and a mango theme going on lately, and both are delicious!
i love mexican food, i don’t need cinco de mayo as an excuse:) p.s. topping anything with avocado is a always the best idea.
I know, I don’t need an excuse either, it’s one of my favorites. with Cinco de Mayo I can get away with having Mexican food EVERY day this week!
Holy wonderfulness!
These look awesome. And delicious.
thanks, girlie! they are pretty dang good!
These look amazing! We are not doing anything for the occasion. As much as a love mexican food, I am not feeling it today. Can I just come over and have some of what you’re having?
yes, I SO wish you could!! I would let you have all the margaritas you want!! <3
Twice today I’ve seen someone adding in quinoa to their enchi’s – never thought to do that. Yours look super tasty. I love Mexican food – it’s my fave!
wow, how funny! I use quinoa in my wraps all the time… thought I was being unique to use it in enchi’s!
Ooops, excuse me. It was a taco I saw it in, not enchi’s. http://www.sunnyvegan.com/?p=103
But still, I never thought to use it in either form! Hope you had a happy Cinco de Mayo!
oooh, YUM, those tacos look GOOD. Happy Cinco, and now Happy Friday!!
I almost licked my screen these look so good, and I don’t even like sweet potatoes!!!
hee! Jason isn’t a big sweet potato fan either, but he likes these because they are spicy
I love the quinoa/black bean variation. I’ve never thought to make an enchilada with that. Looks amazing!
thanks – they were SO good, and I will be using quinoa in more enchiladas now! I use quinoa in wraps all the time!
How perfect! We’re also celebrating with enchiladas… these look absolutely fabulous, especially since we’ve been eating a lot of quinoa these days. Love the idea of the mashed red pepper sweet potatoes!
those potatoes are good on their own too! but I made them specifically for these enchiladas, and they are perfect with the quinoa + beans, giving a little binding factor that cheese usually would…
I hunted it down! You are always sneaking in quinoa into things, I need to take a cue from you because I have a Costco bag of it!!! These look great.
