spicy black bean sweet potato enchiladas

Happy Cinco de Mayo!

Last Cinco de Mayo we were in Austin, hopping around from Opal Divines for breakfast and lunch, dinners of barbecue or Torchy’s, May fifth margaritas at Chuy’s. I would love to be in our friends backyard right now, sitting around the chiminea, talking and laughing. Soon enough, soon enough…

Remember those red pepper sweet potatoes I made last week? This is the recipe I made them for!

spicy black bean sweet potato enchiladas

corn tortillas
quinoa
black beans
mashed red pepper sweet potatoes
green enchilada sauce

Fill  tortillas with potatoes, then quinoa and beans. Roll and line up in baking dish. Pour enchilada sauce over top, cook @ 350 for 35-40 minutes, until warmed through and bubbly.

These have some significant heat to them – I topped mine with slices of cool avocado – perfect.

I think I need this right now please. YUM. I love the combo of black beans and sweet potatoes. I like the addition of the quinoa as well. Nicely done!

I didn’t realize unti now that it’s Cinco de Mayo, but maybe we’ll celebrate tonight with some drinks and some fun food.

I absolutely love the combination of black beans and sweet potato, and have made quesadillas using that combo, but I haven’t tried it with enchiladas. Yum.

So fun!! I love these easy recipes!!

No celebrations for me, I work all day and as soon as I’m done, I have to drive 45 mins to do a 3 hour class, then back home and to SLEEP!!!

Saucy, I love the idea of sweet potato enchiladas! I am definitely celebrating—my eating Mexican at every meal! I’m also going to meet some friends for margaritas later on but until then it is just a normal day.

Twice today I’ve seen someone adding in quinoa to their enchi’s – never thought to do that. Yours look super tasty. I love Mexican food – it’s my fave!

How perfect! We’re also celebrating with enchiladas… these look absolutely fabulous, especially since we’ve been eating a lot of quinoa these days. Love the idea of the mashed red pepper sweet potatoes!

those potatoes are good on their own too! but I made them specifically for these enchiladas, and they are perfect with the quinoa + beans, giving a little binding factor that cheese usually would…

I hunted it down! You are always sneaking in quinoa into things, I need to take a cue from you because I have a Costco bag of it!!! These look great.
