coconut mango cobbler

Happy Friday! We made it.

People are starting to comment that I have been cooking a lot of quinoa recently, using it in a few unique ways. Jason likes quinoa now, so I am back to making a weekly batch and I have been making a small amount fresh for dinner also – it’s so easy.

We have been enjoying a good amount of mangos too. All of them delicious.

Can I plant a mango tree?

coconut mango cobbler

serves two

1 mango, peeled and cubed
1/2 cup brown rice flour (or coconut flour!)
2 tablespoons Nu Naturals MoreFiber™ Baking Blend™
1/2 teaspoon baking powder
3 tablespoons coconut milk
2 tablespoons Earth Balance, melted

Sift together flour, More Fiber and baking powder. Add milk and melted Earth Balance, combine. Coat two ramekins with Earth Balance or cooking spray, split mango pieces between them. Top with cobbler mixture. Bake @ 350 for 25 minutes.

Top with vanilla coconut ice cream.

vanilla coconut ice cream

2 cans coconut milk
10 drops Nu Naturals Pure Liquid™ Vanilla
1 tablespoon arrowroot powder
1 tablespoon Nu Naturals MoreFiber™ Baking Blend™

Whisk ingredients and add to ice cream machine – blend per instructions (this took 25 minutes to become a soft serve consistency, after another few hours in the freezer it was a firm ice cream).

 

Mmm, yum.

Do mangos grown on trees?

That looks fantastic. I love that you used the NuNaturals Stevia too. I always loved peach cobbler as a kid so I’m kind of drooling right now. My Jason loves mangoes.

I love brown rice flour and quinoa flour! They really are such great gluten free alternatives! You know I’m a fan of the cobbler too…YUM!

Yep! This too is another bookmarked recipe of yours. I wish and pray that I had a mango tree so that I could eat one everyday of my life. That would be heaven. And this recipe. Heaven x 2.

I know… I need to look into that mango tree… ;) my dad is from Hawaii, and we’d vacation there during summers growing up… every morning breakfast was a papaya or a mango… SO good!

The posts with homemade ice cream make me want to buy an ice cream making machine! I’d love to make dairy-free creations at home…the store-bought versions are so $$. Mango cobbler sounds fantastic! Right up there with peach…mmm.

it’s really fun, I have not once regretted getting mine. if you do get one, don’t be discouraged by the dairy free ingredients, it will look like it’s never going to get there, you know? I love to sit and watch the whirling… and the dairy free versions go for really close to 20 minutes still looking like liquid – then they start to work! it’s generally the consistency of soft serve (which is good too!) but after a few hours in the freezer it’s like normal ice cream. YUM.

also? Whole Foods had NO peaches! I was going to make peach… but this was awesome so I’m kinda happy with that turn of events…

wow, now there’s a happy friday greeting: coconut mango cobbler! Yum! My son loooooves mango (so of course he’d love this) so we always seem to have them around. Maybe I’ll have to make a little cobbler – he can have a baby bite. I’ll eat the rest. :)

Ah…Mangoes. We had 4 trees where I grew up. Haydens are possibly what you are using in your cooking. They are so close to peaches in consistency and flavor. Good with vanills ice cream Yum! My sister, Anne and I loved the green mangoes fron another tree, cut up with soy sauce as a dip. We’d break out in a rash, get over that, repeat.

I would love to have a mango tree! Really, I’d love to have any fruit tree. Talk about fresh fruit!

This cobbler looks delicious. I never think of making cobblers in the spring – for whatever reason, they’re more of a “fall” dessert to me. Silly Liz… cobblers should be a year-round treat!

Holy Mother of Mangoes! I just…I can’t…words…eeeeek!

I seriously need to break out my ice cream maker that’s been in the box since February! Would this work without the fiber baking blend?
