Much of this week has featured Mexican themed eats, and I have just one more to share.
On the night of Cinco de Mayo, we once again had grilled tacos! This time they were fajita style, with grilled onion, bell pepper and marinated tofu.
I have a grill pan so it’s really easy to grill veggies without having to skewer them.
grilled fajita tofu tacos
1 block (extra firm) tofu
1/2 package fajita seasoning
2 tablespoons olive oil
2 tablespoons lime juice
1 yellow onion
1 red bell pepper
corn tortillas
toppings: guacamole and So Delicious coconut yogurt – trust me, that was good!
Combine olive oil, lime juice, seasoning in a baking dish or bowl. Cube tofu and add to marinade, coating completely. I covered and returned to fridge for an hour.
Skewer tofu and veggies or use grill pan. Grill on medium heat until cooked through with char marks.
We ate these with a simple salad topped with guacamole and more fajita veggies. Then saved room for coconut mango cobbler…

Those tofu fajitas look amazing! I’m not a sweet potato lover, but my husband would love those mixed with black beans in the enchiladas.

Love the idea of grilled tacos. I don’t use lime juice terribly often. Not sure why, bu I forget about that little green guy. I actually didn’t make anything Mexican style this week at all. Hope you’re having a great Saturday.

And you seriously have a gazelle? Does it work? I have a “slap chop” which is on it’s last leg because I used it to death. Have you heard of the Hawaii chair? Google it and watch the commercial!
ha – the gazelle is um, FUN. the workout you see Tony do? eh, it’s not really a big workout. it’s under my bed right now, but when I DO use it, I do it differently and get a GREAT arm workout with it. the Hawaii Chair!! yes, I’ve seen that craziness. looks like fun, though, if I had a desk job!!

I really should have gone out and eaten Mexican this week, or made some like yours. I’m totally going to bookmark these recipes, they’re fabulous! The only remotely Mexican thing I did was make an avocado daiquiri haha. I had to work on the 5th anyway…

How come all the times I’ve tried tofu, it looked and tasted like a sponge?? Every time I see your tofu pics, I think I need to try it again! Yep, that’s progress!
I found the umeboshi vinegar at Whole Foods in the ethnic foods section. They had the actual plums in a pickling sauce, but the vinegar was with other jarred sauces.

That looks amazing. We had these quesadillas (http://ow.ly/4NuLk) for cinco de mayo and we made ours on the grill too. I never thought to use tofu for fajitas though, but that’s an awesome idea.
