spinach pancake deli sandwich

Happy Wednesday, everyone! I hope this week is treating you well. It’s time for another What I Ate Wednesday!

First up, a new smoothie. This one kept me energized all morning – I had a great workout – perhaps I’ll make this every day?

MCA Smoothie

serves one

3-4 handfuls fresh spinach
Maca – 1 tablespoon
Coconut water – 8 ounces
Avocado – 1/2

A bit of a stretch, isn’t it? When you have smoothies and juice every day, sometimes it’s hard to name them. Hmm. I suppose that’s only a blogger thing?

Next you are going to tell me only a blogger would serve a smoothie in a cocktail shaker…

This smoothie was amazing! Maca adds a nutty richness from the peculiar flavor I cannot describe, and the avocado gives it a lush creamy finish. I figured since Adam Yauch is beating his cancer with the help of  a vegan diet, this is a proper tribute to him. Still praying for a full and speedy recovery, MCA, and not only because I want to see my Beasties in concert again…  :)

Other eats from the week:

This weekend I made my spinach pancakes. I made them with my Ener-G egg replacer, so they were not quite as fluffy, but still great! I made them into a deli sandwich of sorts, with Tofurkey, cheddar Soy Kaas and butter lettuce.

Perfect sandwich to me!

I’ve been eating a grapefruit a day – my favorite!

Bowls for dinner – a take on my Thai Sweet Potato Lettuce Wraps.

I ran out of avocados that night… boo!

I’ve been eating many of my favorite bar flavor…

and maybe we discovered some golden fried asparagus?

It was served with a garlic aioli. Good grief, Charlie Brown, this was GOOD.

In other news, Basil felt his presence was needed here, and wanted to say hello.

OMG Basil w/ his ears flipped back is SO CUTE!!!!!!!!!!!!!!!! And I just saw fried asparagus in an email and it had me drooling! Now my attention is definitely piqued!

I want your pancake sandwich! Sometimes pancakes or waffles are the perfect solution to wanting something a little different than bread ;)

That green smoothie sounds amazing…it is hard to come up with good green smoothies names, I am not very clever so it hard for me ;)

Your pictures look lovely! That’s so funny about the smoothie because MCA is an acronym we use at work ALL The time (obviously not for a smoothie) haha so I laughed when I saw this! I like your MCA!

Your spinach pancake sandwich looks delicious! I buy Soy Kaas cheese but I’ve never seen slices, only the big brick of “mozzarella”.

I just love your spinach pancakes. I had oatmeal this morning (big shocker). Not sure what the rest of the day will hold actually. May end up eating lunch out. I think today will be our one shopping day. Though I’m looking at the beach and rethinking that ;-)

Everything looks so yummy!

I’m all about the maca and avocados in smoothies. Sometimes I get in a rut, and I just have to pull out the maca and get a little maca buzz going :)

I’ve been eyeing your green pancakes for awhile now. I might just have to make them before I go away this summer. yum! What a great idea to make them into a sandwich too!! I just cut fresh asparagus from our garden last night and it is a-roastin’ in the oven right now!

Oh my goodness you are soo healthy! I would never imagine making these things…but I bet they are delish!!! :-) I need to take some of your creativity and apply it to my own food :-)

And Basil is ADORABLE. My dog gets flipped ears all the time…usually when he is being bad ;-) Hehe

Can’t go wrong with bright green food! Mm, that whole sandwich combo looks so good. I want that asparagus! I had fried avocado the other day and it was amazing enough–this looks even better (plus fried + veggie = neutral health food? I think so).

Ohhhhhhhhh, fix his poor little ears!!! I can’t stand it! I’m seriously waving my hands in front of my face like, “eeeeeek!” I know it doesn’t hurt them, so why does seeing doggie ears flipped over give me the heebie jeebies?!

I am in love with that spinach pancake sandwich! Gorgeous!
