vanilla fig sandwich cookie – Newtons Fruit Thins

As part of the Foodbuzz Tastemaker program, I received another new product to sample – Newtons Fruit Thins. I was happy to see they sent me the Fig and Honey flavor, as I love figs! There are other flavors that sound good – Chocolate Raspberry, Cranberry Citrus Oat and Blueberry Brown Sugar.

A thin crispy cookie, they contain real fruit and whole grains (8 grams per serving). I love a thin crispy cookie and these were good!

I cannot leave well enough alone, though. I had to make a sandwich cookie out of them – with more fig!

vanilla fig spread

fills 8 sandwich cookies

8 dried figs
6 Medjool dates, pitted
10 drops NuNaturals Vanilla Stevia
1 tablespoon nut butter
1 tablespoon chia seed gel

Process in food processor. Spread on cookie, top with another cookie. Enjoy!

The cookies are tasty on their own, and with this spread sandwiched between, just lovely. This spread is also good as an oatmeal topping, rolled into a ball as an energy bite, eaten off a spoon

and per your last comment to me re Cloud storage. SUPER helpful. thank you! i hate ext hard drives, such a pain, then i still have hardware one day to deal with so thanks for that info…virtual everything. love.it.

yes – cloud storage – dropbox is AWESOME. we’ve had it for a while now, and it’s great. there are shared folders too, so you can share between computers, which is really nice (Jason and I give each other things all the time, music, photos, just drag it in!) virtual everything – I love it too! :) XO safe travels!

I am a fig fanatic and i think you just became my hero.
not only does the spread sound amazing (and I would eat by the spoonful. probably in one sitting…) but I’ve never heard of those thins before! Sound awesome.

These look so good! I’m 100% addicted to dates and figs, and was thinking of making fig bread soon. I might make this spread while I have the food processor going- although I’ll have to clean it out before making your spinach pancakes!

Btw, isn’t Newman’s Own a great brand? Fig Newmans especially, and I’d definitely try these thins!

I LOVE fig Newman’s. So much that I eat an entire box in one sitting! It’s OOC, but I’m fine with it since it’s not everyday! Thanks for the recipe post, now I can make them at home!

How smart are you? Sheesh! I did something similar last night for a snack, but I didn’t think to sandwich the mix between 2 cookies. I mixed 5 prunes, 2 tbsp maple almond nut butter, and 1 tbsp chia seeds and then spread it on apple slices. It was unreal! I’ll have to try it with cookies too!

yes – that sounds very similar! the chia in yours was probably a great crunch – similar to the fig in mine, maybe. and yeah, I could eat this without the cookies (and did…)

At first, I actually thought the cookies had already come with the filling, and you had picked everything out before taking the just-cookies picture. But then I understood that you had *added* the filling to the cookies which had just come as … well, *cookies*, plain and simple, and were happy to be turned into little artworks by Spabetti kitchen witchery. ;)

Wow the fig spread sounds wonderful. I love the crunchy seeds in dried figs and the addition of chia seeds sounds like a great idea.
