You really cannot get much easier than this. Place a tablespoon of goat cheese on each fig cookie, top with slices of fresh red velvet apricot. Sometimes the most simple is the most delicious.
The tangy goat cheese is a perfect flavor with the sweet and juicy apricot, and they both pair well atop these mildly sweet cookies.
They are quick to assemble, you can enjoy a few for an afternoon snack or make a platter for a party…
or a Tuesday.

I love bruschetta… I rarely remember to add cheese to it, mine is always simple olive oil, roma tomatoes, basil… sometimes balsamic. I need to add cheese.
