apricot & goat cheese on fig crisps

by Kristina Sloggett

Another tasty bite for Happy Hour at Home! Using those delicious fig cookies as a crunchy base, this is simple and impressive in both presentation and flavor.

apricot & goat cheese on fig crisps

red velvet apricots
vegan goat cheese
fig cookies

You really cannot get much easier than this. Place a tablespoon of goat cheese on each fig cookie, top with slices of fresh red velvet apricot. Sometimes the most simple is the most delicious.

The tangy goat cheese is a perfect flavor with the sweet and juicy apricot, and they both pair well atop these mildly sweet cookies.

They are quick to assemble, you can enjoy a few for an afternoon snack or make a platter for a party…

or a Tuesday.

Something else we will be enjoying all summer.

Those fruits look like plums – I bet they taste so delicious! I need some new fruit choices in my life. I’ve been on a berry kick lately, but it’s not always friendly on my wallet!

Gorgeous! I love stone fruit on *anything*… though I’m especially partial to topping goat cheese with bruschetta. :D

Reply

I love bruschetta… I rarely remember to add cheese to it, mine is always simple olive oil, roma tomatoes, basil… sometimes balsamic. I need to add cheese.
