garlic cream risotto with summer vegetables

Some days, comfort food is needed. I recently had one of those months days.

Gooey bourbon bread pudding, fresh baked bread with melted butter, a decadent mac & cheese or a big gummi bear? All great comfort food choices in my book.

So is this.

When I was a kid eating only grilled cheese, I never would have thought I’d say this. I crave fresh seasonal vegetables. Add garlic, rice and a creamy sauce and you have a delicious comfort food.

Pair it with a fresh spinach salad and a bottle from a recent Napa trip and Mmm, you’ll soon be all smiles.

garlic cream risotto with summer vegetables

serves two

2 tablespoons olive oil
1/2 red onion, diced
3 green onions, sliced thin
5-6 crimini mushrooms, quartered
1 zucchini, sliced into rounds and halved
1/2 cup arborio rice
3 cups  vegetable stock
2 roma tomatoes, chopped
1/2 cup garlic cashew cream (recipe below)

Bring stock to boil, reduce to simmer and set aside. In stock pot, sauté onions, mushrooms and zucchini in olive oil. Add rice, stirring to coat. Add simmering stock – one half cup at a time – stirring after each addition until most of the stock is absorbed.

Remove from heat, add tomatoes and garlic cream, stirring to combine.

garlic cashew cream

1 cup raw cashews, soaked overnight
1/2 cup water
2 cloves garlic, finely minced

Blend or process on highest power. Adjust water to thickness preference.

This sounds dleicious, and I love the addition of the cashew cream. I really need to try to make that, since we almost always have cashews in the house.

Wow, that cashew garlic cream sounds a-mazing.
I tend to crave carbs when I’m seeking comfort – this dish would fit that criteria rather well. MMMM.

Looks so delish! I never made risotto at home, but Mike and I had some yummy scallops with risotto and it was amazing! It was at a place near us called Chops Wine Bar!

Ohh yum! I’ve had one of those days/weeks, too–and this looks like the perfect meal to curl up while watching some trashy TV. My ultimate comfort food is a big, thick *slightly* healthy oatmeal banana cookie.

Favorite comfort food: carrots and chicken roasted in butter with lots on onions, and spiced with cinnamon (or Chinese five-spice), a little tamari, and lots (LOTS!) of pepper. Heaven! :D

Mmmm….I love comfort food. Definitely used to crave the simpler kid comforts, but now your comforting produce and risotto sounds and looks devine! My most recent comfort food has been avocados and also crab cakes….

Mmmm risotto. I love how it feels all creamy and cheesy but its just the rice. Miracles! I learned how to make risotto from a friend but have yet to make it on my own. Such a shame too. Its delish!!! This looks fantastic!

These are the types of dishes I don’t think of too often anymore because for so long creaminess = terrible stomach issues…but I need to make this with your cashew cream! One of my favorite dishes I’ve ever had a a restaurant was a lobster risotto. Mmmm. Hope this comforted you, Kris! I know it would have done the trick for me. xo

So I was coming back from my race this morning and read this post in the car. My tummy started rumblin’, so naturally, I made it!! I used onions, red pepper, and zucchini and instead of the rice, I used buckwheat grouts and pan fried some chicken for it too!
Duuuuude so good. It’s so comforting!

Risotto is one of my very favorite things, and I make it often. I’ve always said making risotto is the best therapy after a tough day. Slowly stirring the rice and broth as you breathe in the wonderful smells form the pan, and I use wine as is traditional. Love the idea of the garlic cashew cream. You’ve reminded, I’ve been wanting to do a blog on risotto as well. Not hard to make. I once walked a friend through it on the phone! Thanks. Looks good!

A cheesy risotto definitely makes for one of my favorite comfort foods. But my all time favorite has to be chips and dip…or a baked potato. Basically, I’m a sucker for those starchy spuds.

I just made this, it was amazing! I didn’t quite use all the stock the recipe called for…I would recommend testing the rice a few times during the cooking process to see if it’s done. I also used leeks instead of red onion (just not a fan of onions). The one other time I’ve made risotto it was…not good, but this turned out great.
