english muffin pizza!

The other day I almost jumped up and down to find gluten free english muffins! Rachel’s recent post reminded many of a favorite childhood snack, and when I came across these english muffins I was reminded again and had to get them. We had english muffin pizzas with dinner that same night.

I also found the new Daiya pepper-jack flavor, which I used for the pizzas. We loved it.

inspired by Rachel and childhood

english muffins
pizza sauce
cheese
vegetables, toppings of your choice
fork to split the english muffins*

*Rachel pointed out the importance of splitting the muffins with a fork, to keep the integrity of the ‘nooks and crannies’ of the muffin. I wholeheartedly agree, as I’ve been using the fork method since childhood. A knife simply will not do.

I assembled my pizzas and baked them at 350 for 8 minutes, broiled for just one minute more.

English muffin pizza is just as good as I remembered. Crispy and melty and saucy and nostalgic.

I love eng muffin pizzas — my favorite toppings are ground beef and black olives.

I need to find this Daiya, especially now that they have pepperjack — that is my favorite cheese flavor.

Yay for pizza! And I love that pepper jack Daiya, just wish someone would carry it here now. You know, I love broccoli on pizza, but I never remember to use it.

I’m so glad I finally found it… is it just the pepper jack you cannot find? you have the others, right? perhaps it’s just taking a while to get to you. (I have been looking for a while and JUST found it!)

mmmm, I love a good crispy pizza base. I’d put artichokes and mushrooms on mine. And maybe olives…and maybe jalapenos. :) Some of Billy’s homemade sauce, of course.

I love English Muffins. I put Laughing Cow on them and get so excited when I get a little extra cheese because it got smooshed into one of the nooks.

I never thought to make them into little pizzas!

Trader Joes is opening in our neighborhood in TWO days!! I plan to buy some TJ GF English muffins on day one and try this!! They may also have the pepper jack flavor that our grocery store doesn’t have. Oh boy!

super cute idea :) My mom used to make these when we were little. My hands-down favorite pizza topping is pineapple. I’m obsessed. I simply cannot eat pizza without it. It’s something about the combination of marinara sauce and sweetness of fruit that leaves me in heaven. Love it!

I used to make a mushroom pineapple pizza all the time, thinking while I liked it, others would find it odd. when Jason and I first started dating, we went out for pizza… when deciding what to get we both said “this might seem weird, but…” that mushroom pineapple concoction was both of our favorite!! :) I still love that story…

These look so great! And if they’re gf, even better! :D I love that you took broccoli, I’d totally do the same thing! (Broccoli was always one of my favorite toppings when I made homemade pizza – without cheese, though. I totally need to do this again! :D )

gawsh I miss English muffins. I used to have 2 a day for at least 10 years. I need to find me some GF English muffins, it’s been far too long. My favorite way to enjoy them was toasted with butter, sugar, and cinnamon. haha wow, how times have changed!

I love love love broccoli as a pizza topping! Me and my little brother always used to make english muffin pizzas in the toaster oven after school for a snack! :)

I am such a fan of wheat muffins (are they wheat)? My toaster oven broke but there’s something about having a toaster oven which a microwave or oven can not do.
