The other day I almost jumped up and down to find gluten free english muffins! Rachel’s recent post reminded many of a favorite childhood snack, and when I came across these english muffins I was reminded again and had to get them. We had english muffin pizzas with dinner that same night.
I also found the new Daiya pepper-jack flavor, which I used for the pizzas. We loved it.
english muffin pizzas
inspired by Rachel and childhood
english muffins
pizza sauce
cheese
vegetables, toppings of your choice
fork to split the english muffins*
*Rachel pointed out the importance of splitting the muffins with a fork, to keep the integrity of the ‘nooks and crannies’ of the muffin. I wholeheartedly agree, as I’ve been using the fork method since childhood. A knife simply will not do.
I assembled my pizzas and baked them at 350 for 8 minutes, broiled for just one minute more.
English muffin pizza is just as good as I remembered. Crispy and melty and saucy and nostalgic.
What toppings would go on your english muffin pizzas?

Mmm, I love English muffin pizza – such a childhood favorite!
I know – the taste was very nostalgic!
Fantastic!!! Love that what I was sure to be a silly post no one would care about would make you go out and make them that same day! Such a fun and healthy grown up version!
oh, they were SO good… thanks for the inspiration! totally brought me back to after school snacks!
(and isn’t it funny, sometimes the posts you “think nobody will care about” are the ones that get people?)
I love eng muffin pizzas — my favorite toppings are ground beef and black olives.
I need to find this Daiya, especially now that they have pepperjack — that is my favorite cheese flavor.
pepperjack is my favorite too!! it’s pretty good!
Yay for pizza! And I love that pepper jack Daiya, just wish someone would carry it here now. You know, I love broccoli on pizza, but I never remember to use it.
I’m so glad I finally found it… is it just the pepper jack you cannot find? you have the others, right? perhaps it’s just taking a while to get to you. (I have been looking for a while and JUST found it!)
and yes indeed, YAY for pizza!
It’s just the pepper jack I can’t find here. I was lucky to find the pepper jack in Seattle. Or maybe not lucky b/c I know what I’m missing now
I’ve NEVER heard of the fork method! Brilliant!
I haven’t had pita pizza’s forever, they are sooo good though!!
i used to make these little pizzas ALL the time! it’s been way too long.
exactly what I thought… and it was just as tasty as I remembered!
Hi! What brand are those english muffins? And were they any good? Those pizzas look fab!
mmmm, I love a good crispy pizza base. I’d put artichokes and mushrooms on mine. And maybe olives…and maybe jalapenos.
Some of Billy’s homemade sauce, of course.
I love English Muffins. I put Laughing Cow on them and get so excited when I get a little extra cheese because it got smooshed into one of the nooks.
I never thought to make them into little pizzas!
Erin!! you have never had an English muffin pizza!!?? you need to remedy this now.
OMG I LOVE english muffin pizzas – haven’t made them in years! I totally need to, this brought me right back. YUM!
DOOO IIIT, Jess! they taste just as good as you remember…
These remind me of my childhood! Although I probably wouldn’t have chosen broccoli as a topping back then….I would now.
haa – Maryea, my childhood pizza definitely did NOT have broccoli. or any green, for that matter.
Trader Joes is opening in our neighborhood in TWO days!! I plan to buy some TJ GF English muffins on day one and try this!! They may also have the pepper jack flavor that our grocery store doesn’t have. Oh boy!
woo HOO, Nancy! I’m excited for you. have you ever been to one?
have a great time!
super cute idea
My mom used to make these when we were little. My hands-down favorite pizza topping is pineapple. I’m obsessed. I simply cannot eat pizza without it. It’s something about the combination of marinara sauce and sweetness of fruit that leaves me in heaven. Love it!
I used to make a mushroom pineapple pizza all the time, thinking while I liked it, others would find it odd. when Jason and I first started dating, we went out for pizza… when deciding what to get we both said “this might seem weird, but…” that mushroom pineapple concoction was both of our favorite!!
I still love that story…
Yum, what fun! And what an easy snack/light meal. I would definitely add some broccoli as well–always so good on pizza!
yes, the broccoli wasn’t part of my childhood pizza, but it is now!
You can never go wrong with English muffin pizzas! I love spinach, peppers and onions. Perfect individual pizzas!
Definitely needs banana peppers!!!
These look so great! And if they’re gf, even better!
I love that you took broccoli, I’d totally do the same thing! (Broccoli was always one of my favorite toppings when I made homemade pizza – without cheese, though. I totally need to do this again!
)
LOVE this idea! I think I’ll make it for dinner
I’ve totally done this with naan and its amazing.
These look fabulous! I can’t get enough pepper jack!
gawsh I miss English muffins. I used to have 2 a day for at least 10 years. I need to find me some GF English muffins, it’s been far too long. My favorite way to enjoy them was toasted with butter, sugar, and cinnamon. haha wow, how times have changed!
mine are usually covered in peppers! its totally childhood for me too! =)
I love love love broccoli as a pizza topping! Me and my little brother always used to make english muffin pizzas in the toaster oven after school for a snack!
I am such a fan of wheat muffins (are they wheat)? My toaster oven broke but there’s something about having a toaster oven which a microwave or oven can not do.
I don’t love butter, but I couldn’t imagine anything I love the way I love a toasted english muffin with butter. Mmmm. And yeah—English muffin pizzas take me right back to elementary school lunches!
My mom would be all over those. She loves her english muffins
Love the idea of using them for a pizza bottom!
I’m such a dork. I never thought to put veggies on English Muffin pizza.
Now those are a reason to purchase gluten-free English muffins!
xo,
Shirley
