cinnamon chip Baileys cookie

These cookies pair well with a warm cup of black tea and Baileys.

They go perfectly with a dachshund, a blanket, and a Saturday afternoon House marathon.

They are a welcome gift for the ER staff and volunteers, one of which remembers you by now.

Melt in your mouth and lightly crunchy, these blonde lovelies have an added sparkle from the dots of vanilla bean. Can you see them?

cinnamon chip Baileys cookies

makes 28-30 1 inch cookie balls

1 cup butter (Earth Balance soy free)
1/4 cup sugar
1 tablespoon vanilla paste
1/4 cup Baileys (I used homemade)
2 cups flour (gluten free ap)
cinnamon chips (*optional)

Cream together butter, sugar, vanilla paste and Baileys. Stir in flour 1/2 cup at a time, combine until dough forms, do not over mix. Knead into a ball, cool in refrigerator 10 minutes. Roll into one inch balls and place on prepared (parchment or Silpat) baking sheet, press 4-5 cinnamon chips into each ball. Bake at 350 for about 12 minutes, until just golden brown on edges. Cool completely. 

*Without the cinnamon chips, this recipe is dairy, soy, gluten free and vegan.

A yay for the day:

While I generally prefer to support our local businesses, this is why I will be going to Starbucks today. “Not something that was a difficult decision for us” – bravo.

I know… very good! these are the ones I attempted to make myself, to be gluten free and vegan. I came up with something tasty, but when baked into a cookie it wouldn’t really stay a “chip” ;)
