chipotle, pineapple and brie sandwich

Today’s lunch was conjured in the Whole Foods aisles this morning.

I found out some horrifying news today – I have to have my wisdom teeth pulled! (What, am I in middle school? Is chicken pox next?) Horrifying because I have an irrational fear of the dentist. Just put me out and clamp headphones over me.

Naturally I deserved a treat, right? (with that logical justifying I really may be middle school age…) I stopped at the market after my dental appointment, and my first thought was brie. They carry a brie from a local farmer I met at the farmers market, and even saw one of their goats. Local cheese from happy goats.

I have wanted to do a sweet savory something with pineapple and chipotle, and as I was selecting a croissant it all came together:

chipotle, pineapple and brie sandwich

serves one

2 slices fresh pineapple (horizontal, like rings)
2 slices brie (lengthwise down wedge)
1 tablespoon chipotle mayo
1 croissant (or bread/wrap/salad of choice) 

Preheat oven to 350. Chop pineapple into bite size pieces, slice brie. Slice croissant in half lengthwise, spread both sides with chipotle mayo. Place brie pieces on larger (bottom) side of croissant, top with pineapple slices. Place sandwich open faced on baking sheet, ‘bake’ for 7-8 minutes until warmed through and brie is melted.

Reminds me of the flavors of pizza with pineapple – sweet and savory goodness. This is just what my inner 9 year old needed today. I may need another on Wednesday…

Do you still have your wisdom teeth? You probably had them out when you were a kid, right?

Oh no. that stinks. I had to have mine out the summer before my senior year. I won’t even tell you about it. It’s crazy because it seems like some people have no problems at all and others do. Jason had his out about 4 years ago. He bounced back pretty fast. Oh, and I too have a fear of dentists.

Pleeeeease make this for me! haha. I am drooling on my keyboard right now. I have a love affair with brie but I don’t buy it nearly enough! This looks amazing!!

Ps. I had my wisdom teeth out in high school. My husband still has his and I cringe knowing he’ll probably has to have them pulled at some point in the near future (he hates the dentist more than ANYONE I know).

it sounds like your husband and I have the fear of the dentist in common… I have no idea WHY, but my fear is big.

Oh no!!! That is awful news. I have one wisdom tooth left. The rest have been pulled. My mouth is jacked up, or at least it was. I will save you the horror story of how the dentist pulled the wrong tooth on me when I was a kid and this is why I still have a wisdom tooth (one instance only has to do with the other because I had extra room on that side, not that they accidentally didn’t pull a wisdom tooth). Yeah, I hate the dentist.

Now, how could you post that melty cheese…I want that so badly! I never miss cheese unless I see it all melted on something. Then I have to cry a little inside…

You will do great. Don’t worry about it. It absolutely stinks that you have to get it done, but I’m sure you will be better for it when it’s all said and done. I’m glad your mom is going with you!

I will just live through you on the cheesy goodness. I did have to wipe drool from the screen, but it’s not the first time you made me do that. Make sure you enjoy something good and chewy today! xoxo

This just might be worth the wretched stomach pains it will give to me!!! Looks so darn good… Your wisdom teeth thank you for this :) {I got one tooth pulled. ONE! Not much wisdom here, but it was easy and painless. Didn’t take meds, didn’t need them really, and I basically milked the “I need more time off of work to recovery” cow –best mini vacation ever!}

At least they put you out so you won’t remember a thing! I got mine done 3 years ago and it really wasn’t that big of a deal. And this is coming from a girl who has had a couple of invasive surgeries and it took me uncommonly FOREVER to heal. You will be fine! Have another sandwich :)

oh my goodness, Kris – I still have ALL of my wisdom teeth & it’s been a fear of mine that one day they’d tell me they have to take them out! at least now if that happens I’ll have someone to turn to for support and encouragement. in the meantime, think of all the soft yummy frozen treats & smoothies you can make yourself when you’re recovering. you can make it a whole blog series! xo

yep – I have soft foods and tasty smoothies in my future. I think this is just one more way of my body MAKING me take a break and take care of myself… I’m super nervous but my dentist is a good one…

we need to get it done together!!!! I still have my upper teeth in. Why don’t we both get them pulled and then you can teach me how to juice since we won’t be able to chew for a while. hehe.

oh, Linds!! come down here by Wednesday!! how fun would it be for us to recover together – we could lay on the couch in our pain med stupor, drinking amazing juice and cuddling with Basil. we would go on walks in the sunshine and think up our next smoothie…

I had my wisdom teeth pulled out this past summer…it wasn’t too bad! Good luck :) I want to take a bite of this. I love brie possibly more than any other cheese, and combined with pineapple? Mmmm…I’m tempted to make this and roast the pineapple, so amazing sounding. I will so be making this ASAP.

Eeks! Funny to read this post actually….Grumpy is 40 and is now having trouble with his wisdom teeth!

Your sandwich totally catches my eye. Nothing better than a buttery croissant with some sweet heat and buttery cheese! Yum!

Oh you poor thing. My son just had four wisdom teeth pulled a month ago and it was tough. Soft foods for a week. Let me know if you need ideas besides smoothies.

Local brie?? Oh, YUM. Totally balances out news of dental surgery. I had my wisdom teeth out in high school–and it was really no big deal. I didn’t take any of the ludicrous amounts of pain pills they gave me, and was back in working order within a week. Plus a great excuse for smoothies and ice cream!

I know, I was curious about that too – isn’t all brie from France, or am I totally showing some naivete? ;) even before I published that, I went back to read the label, but the only part left did indeed say Oregon. I’m going with it (and will be buying more!)

I doubt I’ll take the pain pills much either, and I sincerely hope I am better in a week – eek! smoothies and ice cream, here I come! (I have already filled Jason in on this part – emphasis on the ice cream…)

honestly, things come to me at the strangest times. (in this case, not so much – great to be IN the market…)

those goats on that farm ARE happy. perhaps I should sell them that phrase? ;)

tomorrow is the big wisdom day… I can’t think of anything else! (I am SO scared of the dentist). :(

This recipe looks amazing! Will try soon! I work for a Dentist. From my 15 plus years of experience I have not heard horror stories from patients. My best advice is to use lots of ice afterwards. Even if you don’t feel swollen use it! Also, teeth come out much easier the younger you are. I always feel bad when I hear of the fear that people have. We have many “converts” in our office :) Hoping for an easy appointment for you and remember to use ice and take your meds!

I got a cleaning today and she whipped out the dental brush of torture and I shrunk away from it. Haaaate. My daughter (5) was there so I had to put my “this is nothing” face on. I had my wisdom teeth (3 – I only had 3) out when I was 16 or 17. Never had chicken pox (knock on wood).

I hope all goes well with the wisdom teeth. My advice, although probably too late, have an oral surgeon pull them out and get anesthesia!
The sandwich looks fabulous- I can’t wait to try it with the croissants I have leftover from Easter.
