chocolate peanut butter banana bread

Oops. Looks like I forgot the baking soda, yes?

It may have been the excitement of a long Easter weekend, or it could have just been that Portland had a gorgeously sunny weekend. All I know is, I like listening to Rory McIlroy talk.

Wait, what? I meant it is a good thing I like dense and chewy breads. Plus, when you have the combination of chocolate and peanut butter in that bread, do you really even notice?

Not when you eat it while watching the Masters, you don’t.

Maybe I should just call this a soft biscotti instead.

chocolate peanut butter banana bread

dairy, egg, soy and gluten free, vegan

makes one loaf

2 tablespoons chia seeds
1/3 cup water

2 bananas
1/2 cup maple syrup
1/2 cup peanut butter
1/3 cup canola oil
1 cup all purpose flour (gluten free)
3/4 cup almond meal
1 teaspoon baking soda
pinch sea salt
4 ounces dark chocolate, chopped

Combine chia and water, set aside to thicken. Mash bananas in a bowl, add maple syrup, peanut butter, oil and chia, stir to combine. Add flour, almond meal, baking soda and salt to the wet ingredients, mixing dry together before folding into wet. Stir in chocolate, pour into prepared (sprayed/buttered, parchmented) loaf pan. Bake at 350 for 50 minutes, or until inserted toothpick comes out clean.

Oh wow – that looks just perfect. I want a bite right now. I think I actually have all the ingredients too. Had a very nice weekend. Hiking, time with family, and time relaxing with the pupsters.

Oh yum. I don’t know what it is, but banana bread is SO comforting to me. And would go SO SO SO well with my iced coffee right now, with a smear of (more) peanut butter on top of a slice of that banana bread, y’know, if I had a slice sitting here in front of me and all. ;-)

hahaha nothing like forgetting an ingredient in a recipe. Gosh, I do it all the time. Or use baking powder instead of the soda… grr. But hey, if it tastes good, who cares!

Mmmmm chocolate banana bread is one of my faves, but it sounds even better with peanut butter! Will have to give this a try.

peanut butter + chocolate = heaven so I wouldn’t mind that you missed an ingredient! Dense breads are yummy too so looks like you have a winner regardless! The sound of soft biscotti makes my tummy happy!

Yep, the Masters was on at ourhouse…all day long………The ‘kids’.. Jake and Elwood, our 2 doxies and myself got to be outside in the suuny garden enoying the wonderful day…….once in awhile we would come in and we would get a blow by blow of the match….oh goody, right?…ha ha….
By the way that bread looks great to me….that would be good mixed in ice cream too…..yum

This baking soda -less banana bread looks fantastic! Sometimes baking mistakes happen for a reason, I think. :) I think this would be awesome for breakfast, looks so dense!

Well, Saturday we went for a 10 mile run and our tape of the Masters failed to record! But we did rest and laze and watch on Sunday.

My husband says he could win money by betting against whomever I cheer for at any sporting event! hahahahaaa

These bars look wonderful and I will be making them for sure! Thanks for the recipe!

It sounds as though you were glued to the Masters like we were! I don’t think I’d notice anything missing from this bread – there’s chocolate, pb and bananas. What else does one need?! :)

You are SO right…chocolate and peanut butter do drown out anything (supposedly) wrong with this bread. I’m sure I wouldn’t have noticed either! How are you feeling!? Much better and fully recovered I hope.

yep – kinda thought that would deflect from… everything! ;) I am doing GOOD, thank you! – seems to be all healed, although I am now in a habit of careful chewing, I still haven’t been eating many crunchy things yet…
