It’s April, isn’t it?
Q1 was bull-shirt. Stressful, exhausting, trying. I told Jason Second Quarter Owes Us. I am keeping my fingers crossed that things will be looking up. I already know of two things that are… more on that later.
In good news, spring is most definitely here – we have been having perfectly lovely weather in Portland! I walk outside at 5:30 in the morning and it’s warm, the birds are out and it smells so fresh and … springy! It is light until after 8pm now, and I cannot wait until the height of summer where it is light until after 9pm.
Spring and summer bring new flavors, fresh picked garden produce, lighter eats. My favorite time of year, food wise.
Spring also brings new flavors to the NuNaturals line – a lemon and an orange! I have already made several tasty treats with these flavors, and the first I am sharing?
Cookies! and four chances to try both of the new flavors!
cardamom citrus cookies
makes 20-24 cookies
gluten, dairy, egg and soy free, vegan
1 cup butter (Earth Balance soy free)
2 full droppers Orange NuStevia
1 teaspoon cardamom
1/2 teaspoon cinnamon
2 1/2 cups flour (gluten free ap)
1 tablespoon milk (vanilla hazelnut)
Cream together butter and Orange NuStevia. Add flour, cardamom and cinnamon, stir together these three ingredients before folding into butter, adding milk by the tablespoon as necessary. Combine until dough forms, do not over mix. Dough should be fluffy and slightly tacky, but not too sticky to roll with your hands (if it is, use flour on your hands to roll, or drop dough by spoonful). Roll into one inch balls, place on prepared (parchment, spray or silpat) cookie sheet and sprinkle with more cardamom (optional). Bake at 350 for about 12 – 15 minutes.
These cookies are light, powdery-buttery and melt in your mouth good.

i like to use citrus by creating a sauce for steamed veggies using the juice and zest.

Ahhhh those look fantastic. They sort of remind me (probably just the shape) of the Russian Tea Cakes. I mostly use citrus (lemon) in savory dishes to help brighten the flavors. I just read that it helps you absorb the nutrients from spinach better as well.

I love citrus in just about everything, but my favorite way is definitely in baked goods. I recently made some gluten-free, vegan orange scones and I’m thinking that Orange NuNaturals would be a great addition for the next batch.
Zest is my favorite way. You get such bright flavors from such a little amount!
These cookies almost look doughy and “raw” in the middle…love, love, love that!
I love to add fresh lemon juice to asparagus, add some salt and pepper and roast in the oven. Perfect!

I use lemon juice a lot in recipes. One of my favorites is baked salmon with dill and lemon slices.
I used to be on the quest for the best lemon bar recipe, too. I need to pick that up again.

Citrus is a great way to spice up plain chicken. I love it as a marinade. It’s great for baking also. I’d love to try making these cookies. Just need one last ingredient…

I like to add orange and lemon and lime zest where I can… gives things a real zing of flavor. I just made some lemon and chia raw protein ballz and my husband loves lemon so I am always on the lookout for new lemony things.

I didn’t know NuNaturals came in flavors other than vanilla–awesome! The citrus would be so good to add to cookies. Ooo, or warm citrus-flavored coconut or almond milk. Wait, I think that’s more a winter item…
Anyway, my favorite way to cook with citrus is…to put lemon juice on everything. Does that count? But I go through a bag of lemons and then some a week. I just love the fresh flavor.
Hmmm, I must admit I’m not quite sure about citrus flavors with cookies … Cardamom is a winner for sure, though!

Just made these for a bridal shower tomorrow. Mine came out a little dry. Will add more moisture next time. More milk? What do you think?
hi Rachel, mine were not really dry, a little bit I suppose (like a tea cake or butter cookie) but still moist in the middle. you could add more milk, oil or even an egg or applesauce – the cookie may flatten out like a normal cookie, and they would probably have to be scooped, not rolled with your hands.
I hope they are acceptable for the bridal shower and that people still like them!
They are very acceptable! Still great. I may have been a little too critical of my own talents. Mine were just like you described. My sister gave a second opinion and said they turned out just right. I’ll let you know how they are received.
I had to mix the plain alcohol free NuStevia with some orange extract because nobody near me has the new orange blend.
