Rice crispies are so versatile, one of my favorite things to be creative with. I’ve made a few uniquely flavored crispies, but these come from a cookie dough genius.
Lindsay Landis has a new cookbook available June 5, and I was given an advance copy for review. The Cookie Dough Lovers Cookbook is a celebration of all things cookie dough. A very special cookie dough. Eggless cookie dough.

In addition to the dough being egg free, I also used gluten free flour for the dough. My adaptations to this recipe include Gluten Free Rice Crispies (this was the first time I realized “regular” rice crispies are … not gluten free due to a malt flavoring), non gelatin marshmallows (Sweet & Sara), and a vegan butter.

How fun! Rice Crispy treats are so versatile, and I remember when I was little my mom used to make them in paper cups with a stick stuck in the bottom to create a fun “treat on a stick” thing. Plus, she added M&Ms.
Anyway, cookie dough. Can’t go wrong. One of the most popular desserts I made when I worked in a coffee shop had a bottom brownie layer, a chocolate chip cookie dough layer and then a later of chocolate frosting. People went nuts.
I love layered desserts like that. Anything brownie, cookie and frosting is good by me! I remember a friend’s mom doing the same thing, making those dixie cup treats!
“Layer” not “later.” Crap. Sorry.
These might have to be my new favorite cookie! I can eat a whole pan of rice crispy treats!

Cookie dough is trouble! Is there anything better? My sister and I used to make out own cookie dough frozen yogurt. I would buy the Pillsbury cookie dough and cut it into huge chunks. Then I would soften the vanilla frozen yogurt (my all time favorite). I would mix the two together and then freeze. Oh my goodness…heaven. I know it sounds gross, but I would still try to get away with it!

I’d tell you my favourite recipe using cookie dough, but I seriously just love eating any chocolate chip cookie dough. I’ve made it many times without any intention of baking it! Though I would really like to try these…and some cookie dough brownies I’ve seen floating about on Pinterest.

my favorite ice cream is the so delicious snickerdoodle and it has snickerdoodle cookie dough in it! i haven’t seen it in forever though so the tempt coffee biscotti (vegan and gluten free) is my new favorite ice cream ever. it has like little chunks of chocolate cookie dough. magic. (that’s my anything post as it relates to cookie dough:)

Cookies are one of the few things I did not appreciated as much as I should have back when I was vegetarian. The past few years I have only been able to wonder what all these non-vegan cookies at parties and family gatherings taste like. What used too look gross when I was a kid looks so tempting now as an adult. Hope to see this book on my door step with a glass of almond milk soon!

I LOVE this story – so awesome what we ate as kids – mine was spoonfuls of frosting from the can. at my friends house – we never had that at ours – which made it that much more delicious!

One of my favorite recipes I’ve made with cookie dough recently is Chocolate Chip Cookie Dough Brownies. A layer of brownies on the bottom, and a layer of cookie dough on top. SO GOOD! I love anything cookie dough… Just the vegan kind, of course! ; )
