sundaes with Dad

We used to go to lunch with Dad every Sunday. I miss it, Jason misses it, Dad misses it. For the first time in many months, this Fathers Day we took him to lunch. It was so great – just Jason, my dad, my brother and me. We went to one of our favorite places and had a really nice time. I cannot wait until this is a regular Sunday thing again.

Until then, like I already said I am looking for any way to soothe Dad’s throat and give him food that tastes good. Most of the food I am giving him is good for him – fresh juice in the morning, fresh salads and plant based entrees that taste good and are satisfying to him. Other times, I give him things to make his throat feel good and bring a comforting smile – this time in a form of an ice cream sundae.

It makes him smile, which makes me smile.

These sundaes are simple – made with light strawberry slow churned ice cream, blueberries and blueberry sauce. Fresh, frosty and flavorful.

fresh blueberry sauce

1 pint fresh blueberries
1/3 cup agave (sweetener of choice)
juice of 1/2 lemon
1/4 – 1/2 cup water (as needed)  

In saucepan over medium heat, combine all ingredients and cook down until a sauce forms (add water as necessary to thin). Allow to cool and transfer to blender, puree to smooth.

Smiles all around.

And this makes me smile. So glad you guys were able to go out together for Father’s Day. I always loved going to eat with my dad and getting a sundae!

That’s so sweet, and it’s also great that you have a “goal” to shoot for with him. I’m sure that makes his heart just as happy as yours.

And although this is an ice cream post, I can imagine that that sauce would be great on some soothing plain yogurt for your dad. It would make a great parfait!

Such a sweet post :) Your so good to your dad, it’s lovely :) Have you ever tried making ice-cream from frozen banana? Or rice-pudding? You can never have too many frozen treats =] x

You are so loving towards your dad, such beauty that can be felt through the foods you are preparing for him. If you want some recipes that he might enjoy that are easier on his throat, I have a bunch that I made for my friend with thyroid cancer when she had radiation.

Jeanette I would love that! this ice cream was definitely an indulgence, I have been focusing on healthy and plant based, especially lately. I need new ideas, though, and knowing your recipes were specifically for someone going through the same thing as what my dad is doing right now, I am very interested. I have seen a few of your recipes for cancer, it’s a wonderful thing. I know food can be a big part of the healing process – thank you!
