I cannot stop laughing.
Three friends from high school and I have been playing a new game on facebook. No, not one of those games – I’m not going to start asking people to tend my farm or fight my dragon. It all began with this photo – (which I just discovered is an actual book!!) and some funny comments listing some hilariously random articles that “Liz Has In Her Handbag”.
Since then, we have been posting photos of people with handbags, sometimes just the handbag, onto our walls, tagging each other, asking “What’s In The Handbag?” The more random the answer the better (we are incredibly witty at times), and I have been laughing so hard I cry.
…which I completely need and I welcome that laughter and silliness.
Totally unrelated in every way except for being the Things I Cannot Stop category, I cannot stop massaging kale. I cannot stop chiffonading kale. After enjoying grapefruit kale chiffonade for about 12 days in a row, I started changing up the flavors, or massage oils, if you will.
This is my newest favorite. I I made a two ingredient version of my avocado sauce to massage into this simple salad with complex flavor.
lemon avocado massaged kale salad
dairy, soy, gluten free, vegan, raw
makes two side salads or The Big Salad
2 avocados, peeled, pitted, divided
juice of 2 lemons
2 large bunches kale, stems and ribs removed
Slice avocados in half lengthwise, set one half of one avocado aside. Remove the remaining three avocado halves from their peels, place in blender. Juice two lemons into blender, process until creamy smooth.
Remove stems/ribs from each kale leaf, roll tightly and chiffonade. Place in large bowl and pour lemon avocado sauce over top, use hands to massage, coating thoroughly. Serve with reserved avocado (sliced) and tomato. Add sea salt to taste.

I still haven’t tried massaged kale. Not sure I can take it mostly raw. Roasted, sauteed or grilled? All over that one though! I have an umbrella in my purse along with a million other things!

if you aren’t a raw kale fan you may not like it… but if you use something good and flavorful to massage… today I used tahini… maybe you’d like it?

Well now I want to see some example that you guys have come up with! My handbag has…a giant container full of salad (Yup, keep my lunch in my purse. Yup, I like room-temperature lunch-salad.), three books (I AM leaving for three days, after all), and a pair of socks. Because socks ALWAYS come in handy, and I’ve never regretted having socks in my bag…
haa… your real life handbag contents are just odd enough to play this game!
I keep tennis shoes (and racket, and skirt) in my car… I’ve never regretted that either!

I am so glad you have found some laughter and silliness! We all need that from time to time! That salad looks delicious! I need to get to massaging my kale. I have still not tried that yet!

today’s kale salad had tahini… SO good.
I’m a sucker for both lemon and avocado – especially in the summer. And I’m always looking for a new salad combo to spice up my boring weekday lunch. I was burnt out on kale for a bit this winter, but your photographs looks so amazing – my mouth is watering!
