apricot, pear and brie sandwich [vegan brie]

I am putting out an a.p.b. on these apricot pear and brie sandwiches – they are delicious and they are vegan!

Too much? too cheesy? ha! there I go again.

Oh hey, speaking of cheese, I made some vegan brie!

It may not taste exactly like the real thing, but the texture is there, and this ‘brie’ has great flavor!

I have been hoping a vegan brie would appear on the market. Until then, I did find a recipe online. Actually, several. Most attribute the recipe to The Ultimate Uncheese Cookbook, and even if they don’t, they are all the same.

The only change I made was using my newest ingredient in my kitchen – Irish moss! Great as a thickener and emulsifier, I have been wanting to try Irish moss for quite a while, and recently bought some. [This is what it looks like as it is soaking, prior to blending into a gel]. I have big plans for it, and brie was my first use.

Now I have big plans for this brie, but first I had to make a sandwich.

I couldn’t have chosen better fruit to pear pair with this cheese…

and the a.p.b. thing? Coincidence.

Just like that p b and j I made last year…  (p and b for me!), total coincidence.

This sandwich was lovely – sweet and salty and light and fresh. Bright and perfect for a summer lunch.

This brie is spreadable, with no rind to peel! It is tangy and soft and is great in sandwiches or on a cracker. I have a couple other ideas for this brie, and as soon as I try them I will report back.

I’m so curiou about this I might actually have to make the effort to make it. LOL! Is it weird that I kind of like the rind though?

Laura it is really easy, actually – I hope you do try it! and yes, I know some people like the rind ;) I feel like the minority because I don’t!

Now you’re making your own cheese?? Seriously, you amaze me (though I’ve always wanted to try to make fresh mozzarella, I’ve never attempted it!). This looks DIVINE. I love love love fresh apricots!! Must get the hubs to pick some up for me when he’s at the grocery store next, so tasty!!

fresh apricots are one of my favorites too… Mmm. this sandwich was perfect. making a fresh mozz would be pretty cool – this was fun, I can’t wait to use that Irish moss more!

I really want that cookbook – it’s on my Amazon wishlist actually. It’s a tough call for me with cheese. I love smoked gouda, feta, goat cheese.

I want that book now too! I am fairly adept at “cheese sauce” but we learned firmer cheeses in class, so I really want to make more! fermenting at home kinda scares me, but I know I’d be hyper clean about it so I will probably be okay ;)

I’ve been pretty impressed with the few vegan cheeses I’ve made, I just don’t usually go to quite that much effort – more of a special occasion thing for some reason. I think it would be fun to have a wine & cheese party with all vegan cheeses. Hmm…I’m liking the sound of that! :)

What a classy sandwich! And there’s such a thing as vegan brie?? Count me in. I still want to try my hand at vegan cheeses! I don’t have any agar-agar, but I do have guar gum, might work for a softer “brie-like” cheese…

Nope, I’d never even heard of the stuff until, hmm, I think maybe pure2raw had a post about it? It looks like fun, but is definitely something I’d have to find on the Internet, I can’t imagine anywhere around here sells it.

yes, Michelle and Lori talk about Irish moss a lot – I have commented so many times to them that I need to try it! working with it in class in June helped with that, I ordered some right away!

This vegan brie looks divine! I used to make a little wreath of pillsbury crescent rolls with brie melted in the middle with brown sugar on top — I might have to recreate that dish with this brie!

THANK YOU. someone thinks I’m funny. ;) I ordered the Irish moss through Amazon, and it is amazing! It gives that fluffy texture to cheesecake (yep, second thing I made) and it is not weird at all. well, I don’t think so. it is a sea vegetable, so that might weird some people out, and it kindof smells like something sea-worthy, but to me it smells good. and almost like leather.

I don’t know if there’s anywhere to get it here in town… haven’t looked. you should definitely get some!

That’s a very nice and classical combination! :) I used to like sandwhiches with slices roasted turkey or chicken and tomatoes, cucumber, or iceberg lettuce.

Just checked out “Irish moss” and found the following cautionary information…just thought I would pass it on to you. ( One of the ingredients in Irish Moss is carrageenan.)

“It seems that carrageenan can cause inflammation (one of our greatest enemies) and intestinal distress. Even more alarming, when carrageenan is extracted from the irish moss, this form of carrageenan has been associated with human cancers.”

Don’t mean to throw a damper on your excitement about this ingredient, but this sounds well-researched and thought you and your readers would want to have this information for their own judgement.

thanks for this, Linda. I will continue to research this product as I did when I first brought it into my kitchen.

What I initially learned is that the cancer causing carrageenan is a product/additive that is made from Irish moss, and I learned is that the process it goes through – extracted from Irish moss with toxic solvents – then heated and highly processed into chemical form – is what makes it dangerous, and that the end result has no nutritional value and is very different, biochemically, than Irish moss.

I do appreciate you bringing this up, though, and I will continue to follow the studies.

Thanks very much; that worked.

In the meantime I found and tried a really simple vegan feta recipe on the internet and made that with good success. I’ll be interested to compare the two recipes. A new and fascinating world for me.
