My favorite Envy apples are here! They are only around for a very short time, so I make sure to enjoy them while I can. They have great flavor and super crunchy texture.

In other news, I have enjoyed many Caesar salads lately.
I am developing a plant based Caesar salad for a project outside of the blog. I have made several variations, including an awesome raw dressing! Good thing I love salads…
More eats from the week -
southwest six layer dip – as dinner. So good, I haven’t used the fire roasted green chiles from Santa Fe in a while… and saying you had dip for dinner? Always good.
…and because fall is upon us, but I am still making ice creams like the calendar says May, we enjoyed chai-spiked pumpkin shakes yesterday. First pumpkin of the season, and it was good.
Lastly – I picked up some of these bars on our Sonoma road trip (yes, I will have recaps soon!). My favorite was the apricot goji energy bar. Delicious!

So I thought this was going to be a recipe for apple-chai-Caesar salad. The best part was I thought “that could be good!” LOL!
oooh, that does sound good! oh my and I know how I’m gonna do it… I am, I am! (maybe not caesar… entirely). still give props to you though… need to stock up on the Envy!
Ok so are the apples sweet, tart, perfect combo? I saw some the other day but am so picky about red apples.

Mmm, I’m excited for fresh, in-season Pink Lady apples! Those are my favorites, hands down. And they tend to be pretty massive too. Maybe there’s a correlation between size and apple deliciousness?

hmm, I wonder? it would seem the opposite should be true, right? but I sure love those envys.
I’ve never even heard of Envy apples–and I lived in Michigan, land of apples, for years! (We certainly had plenty of winesaps and other heritagenous strains, though. WINESAPS!) Now I’m going to have to search one out.
