double rich chocolate pancakes

Yesterday was my baking day. My cooking day. I was honestly in the kitchen all the good long day.

…and I loved it can I please do this every single day? 

First thing I made was breakfast. Double chocolate pancakes for breakfast.

I was able to try the line of Silk milks recently – many of which are my go to choices anyway (I love their coconut and almond milks).

…and I love chocolate milk – chocolate milk is so good, right?

I used the Silk chocolate soymilk to make these pancakes. I made them even more chocolatey by adding cocoa powder to the batter. The result is a rich, fluffy, perfect pancake.

I still revel in the fact that I can make a pancake that is vegan, gluten free, and still has great flavor and texture. Jason always says he cannot tell the difference, that he wouldn’t guess they were gluten free or made without eggs and dairy.

double rich chocolate pancakes

adapted from perfect cherry pancakes

dairy, egg, and gluten free, vegan

makes 12-15 medium size pancakes

2/3 cup gluten free all purpose flour
2 tablespoons cocoa powder
1 tablespoon baking powder
1/4 teaspoon xanthan gum
1 cup Silk Chocolate Soymilk
2 tablespoons agave (or sweetener of choice)

In mixing bowl, whisk together flour, cocoa powder, baking powder and xanthan gum, stirring out lumps. Whisk in chocolate milk and agave, combine completely. Using a 1/4 cup measure, scoop batter onto an oiled skillet over medium low heat. Flip when pancakes bubble, cooking through on the other side (a minute or so each side).

That ears made me literally laugh out loud. My thoughts exactly. I’d rather be stuffing my face with pancakes. I made pumpkin today!

how have I NEVER thought to use chocolate soy milk in my protein pancakes?? I use almond milk anyway, and could totally try it this way! SO YUM!!!!!!!

Mmm, chocolate. But can I admit I’m not a huge chocolate pancake fan? I love pancakes. I love chocolate. Together? Maybe I just haven’t tried the right recipe ;)

hahahah love that ecard, SO TRUE!! I can’t even get into politics no matter how guilty I feel for not paying attention, I just DON’T care about it, don’t like getting into debates with people over it, blah blah blahhhhh. haha.

And um – can you please make these pancakes on Saturday for me after my 20 miler?? you can be my pancake sherpa!!

Love the idea of chocolate pancakes…maybe with some raspberry syrup even. The card is cute…the rhetoric gets old for sure and pancakes never do!

I love that quote/pin whatever you call it. I’m so tired of the politics right about now. I’m not a big chocolate fan, but I know my sister and her kids would LOVE these. Chocolate Silk is their treat. They love it. And honestly, because you made these and they look so fantastic…I’d eat ‘em ;-) How about some cherry sauce on top???

Minus the soymilk, I have everything to make these!! I guess that means I should go grab some chocolate soy milk. ;) The thought alone of chocolate pancakes makes me swoon… I need to make these soon!

PS, I saw that ecard the other day and laughed. I think mine would just need to be adjusted to say “I made cookies!” ;)
