edamame flatbreads

I love sandwiches.

…and I sometimes make sandwiches with unconventional ‘breads’.

This is edamame week with Heather’s Meatless Monday A-Z, and I used edamame to make a protein and fiber rich flatbread.

These were just as I imagined they would be – a dense but soft bread with a crispy crunch outside, with that light and salty flavor of edamame. I made some into a simple sandwich of sliced tomatoes and melted (vegan) havarti cheese.

Awesome.

edamame flatbreads

adapted from spinach pancakes

dairy, egg, and gluten free, vegan

makes 4 sandwich size flatbreads

1 cup edamame beans, shelled
1/4 cup water
1/2 cup gluten free all purpose flour
1 teaspoon baking
powder
1 teaspoon sea salt
1/8 teaspoon xanthan gum

In blender, purée edamame and water until smooth. In mixing bowl, combine flour, baking powder, xanthan gum and salt, whisking out lumps. Stir in the edamame puree, combine completely – it will form a dough like this. Divide dough into 4 equal pieces, form into a ball and flatten. Place onto an oiled skillet over medium low heat. Cook flatbreads one minute or so, flip and cook other side (another minute), until cooked through.

After that first bite, I had to get a fork to eat the rest. That’s a mark of a good sandwich, right?

I want this! You are genius! I mean, I make chickpea bread, lentil bread, cabbage bread, cauliflower bread…it seems like it would be an easy leap to edamame, right? And of course I used up all my edamame that I bought for MMAZ–time to buy another bag :) And to drool over those spring rolls/salad rolls.

yes, you should make this… I didn’t measure the stats, but you know it has good protein! you could make it with a chickpea or lentil flour for even more!

Oh edamame…how I miss thee. I use chickpea flour in almost everything these days and it’s the highlight of my flatbreads! I love the protein and fiber in beans! I need those spinach crepes! They are beautiful…well everything it, but that dish is calling my name for lunch!

I *love* unconventional sandwich bread! I usually make a flatbread with chickpea or garfava flour – it’s so easy and healthy. These look fantastic, I love anything with edamame.

These cakes look like a great base for a filling lunch! I never know what to do with edamame–beside just eating them out of the pod–but I think that’s about to change. :)

and eating them out of the pod is one of my favorite ways to eat them! :) yes, these are filling, dense. makes a great sandwich or even an open-faced kind of thing, with veggie toppings.

I totally have to try these edamame flatbreads. I’m looking for new recipes for weekend breakfasts. A few weekends ago I created a white bean and veggie pancake inspired by potato pancakes (there’s no flour in them) but I need to expand my repertoire! Thanks!

I hope you do try them – and these could easily be made without flour as well – an almond meal, oatmeal, even quinoa? might be more of a ‘cake’ like a potato cake at that point, though. white bean and veggie pancakes sound good too!

These were great! I ended up making them with brown rice flour and loved them. They kind of reminded me of thinner biscuits, yum. They will be in my permanent food rotation from now on. Thanks! Marya
