I love sandwiches.
…and I sometimes make sandwiches with unconventional ‘breads’.
This is edamame week with Heather’s Meatless Monday A-Z, and I used edamame to make a protein and fiber rich flatbread.
These were just as I imagined they would be – a dense but soft bread with a crispy crunch outside, with that light and salty flavor of edamame. I made some into a simple sandwich of sliced tomatoes and melted (vegan) havarti cheese.
Awesome.
edamame flatbreads
adapted from spinach pancakes
dairy, egg, and gluten free, vegan
makes 4 sandwich size flatbreads
1 cup edamame beans, shelled
1/4 cup water
1/2 cup gluten free all purpose flour
1 teaspoon baking powder
1 teaspoon sea salt
1/8 teaspoon xanthan gum
In blender, purée edamame and water until smooth. In mixing bowl, combine flour, baking powder, xanthan gum and salt, whisking out lumps. Stir in the edamame puree, combine completely – it will form a dough like this. Divide dough into 4 equal pieces, form into a ball and flatten. Place onto an oiled skillet over medium low heat. Cook flatbreads one minute or so, flip and cook other side (another minute), until cooked through.
After that first bite, I had to get a fork to eat the rest. That’s a mark of a good sandwich, right?

I would never think to do this, but now that you have, I think I’m making these today!!
oh good – glad to hear it! did you make them? let me know!
Unconventional bread is the best! That edamame egg salad looks awesome too. Must try!
yes, that edamame egg salad is a winner – either real egg or tofu, we’ve done both!
That looks fantastic. I need to pick up some edamame actually so this was a good reminder. I’m also pinning this recipe
Heather you would LOVE these! great with your homemade burgers!
I want this! You are genius! I mean, I make chickpea bread, lentil bread, cabbage bread, cauliflower bread…it seems like it would be an easy leap to edamame, right? And of course I used up all my edamame that I bought for MMAZ–time to buy another bag
And to drool over those spring rolls/salad rolls.
yes, you should make this… I didn’t measure the stats, but you know it has good protein! you could make it with a chickpea or lentil flour for even more!
How clever! Love these.
thanks, Lora!
Oh edamame…how I miss thee. I use chickpea flour in almost everything these days and it’s the highlight of my flatbreads! I love the protein and fiber in beans! I need those spinach crepes! They are beautiful…well everything it, but that dish is calling my name for lunch!
yes, did you read the spinach crepe post?? it was the PICKLE BURGERS I made after a conversation we had!
where do you come up with thus stuff? these sound great!
I got your message, I am sending the biggest prayers her way, I hope you know. your family does not need this tragedy, I am sending you all love!
thank you SO much, Tom. you’re the best. mean it.
i s it wrong to lick the computer screen. Glad that sandwich needed a fork, those are the best kind ever. agreed!
whoops, grammar mistake. I know you’d appreciate my correction here.
Meant to leave a ? after that first sentence.
totally acceptable to lick the screen…
yes, the messy need a fork sandwich is always a good one!
I *love* unconventional sandwich bread! I usually make a flatbread with chickpea or garfava flour – it’s so easy and healthy. These look fantastic, I love anything with edamame.
I love the garfava flour! I’ve made flatbreads from that as well, you’d enjoy these, then – kinda dense like that is.
edamame egg salad?! YES PLEASE! I have the ingredients for that, I do believe. must put on my list, for real this time.
yes, DO IT!! it’s a good one!
I thought those looked like your blinis – one of the first recipes of yours I made, I believe! And I love the simplicity of this sandwich (after making the flatbread, of course) – I’m very glad you introduced me to Daiya Havarti!
I’m glad you are able to find the havarti – I love it so!
Oh my!! What a fabulous idea!!
thank you – we liked them
I, too, am a sandwich lover and this bread recipe is so unique and creative! I have never seen anything quite like it, but it looks fresh and delicious!
you would love this, sandwich queen!
These cakes look like a great base for a filling lunch! I never know what to do with edamame–beside just eating them out of the pod–but I think that’s about to change.
and eating them out of the pod is one of my favorite ways to eat them!
yes, these are filling, dense. makes a great sandwich or even an open-faced kind of thing, with veggie toppings.
I totally have to try these edamame flatbreads. I’m looking for new recipes for weekend breakfasts. A few weekends ago I created a white bean and veggie pancake inspired by potato pancakes (there’s no flour in them) but I need to expand my repertoire! Thanks!
I hope you do try them – and these could easily be made without flour as well – an almond meal, oatmeal, even quinoa? might be more of a ‘cake’ like a potato cake at that point, though. white bean and veggie pancakes sound good too!
These were great! I ended up making them with brown rice flour and loved them. They kind of reminded me of thinner biscuits, yum. They will be in my permanent food rotation from now on. Thanks! Marya
you are so welcome, Marya – so happy you liked them! they are kindof like a biscuit… we made them with garlic the next time, and this morning I made a batch with red pepper – yum!
We both have edamame on the brain. I posted Garlicky Edamame Cakes today – funny! I love the idea of using the edamame in a bread though – great idea!
I thought about adding garlic to these – next time!
I love all these sandwich breads you come up with – very creative!
thanks, Jeanette – this one is a fun one!
I love edamame, don’t use it enough. I like the rolls, thanks for the tips on the wrappers, that makes a lot of sense.
oh good, I hope it helps! it definitely is an easier way to use them.
these are genius!
thanks, Jenna!
Edamame is so under used and you’ve done such cool things with it here. Love the mango salad. Yum; So pretty.
that mango salad is one of my favorites. when I first made it a few summers ago, I ate it all the time.
Genius! And OH so pretty
thanks, Lou! I love the color too – light and bright!
Edamame flatbreads? Sign me up!!
I love a fun messy sandwich, and a fun creative one too! I made roasted edamame tonight for a fun snack. My hubby and I adore edamame. Your flathead is truly unique and looks soooooo good!
Hugs, Terra
mmm, me too – the messier the better, right? if you guys love edamame, you would like these, I think!
WOW
you so creative and smart.

Very cool idea! so creative.
