cauliflower protein mash

Today is a big day… This morning I am taking Dad to his ct scan appointment, and then to meet with his doctors after the scan. I am hoping to find out some good news – we need some good news!

We all all thinking positive, Dad is smiling and doing well – I’m approaching today with all fingers crossed.

Last night’s dinner was another great roasted tofu recipe I will share soon – that I served on a bed of comfort – puréed cauliflower. I have seen this many times, and while I love cauliflower by itself, I wanted the consistency to be thick like mashed potato – so I added some oomph with beans – giving it a creamy taste and feel.

Add the garlic and butter – these are amazing. It was cold last night, with that great fall smoky scent in the air, and this was the perfect comfort food dinner.

cauliflower protein mash

dairy, soy, gluten and potato free, vegan

makes a large bowl of goodness

1 head cauliflower, greens removed
2 cloves garlic
1 can great northern beans (or your favorite white bean), drained and rinsed
1/4 cup almond milk (or milk of choice)
2-3 tablespoons butter (Earth Balance soy free)
sea salt and pepper

optional add: cheddar

Chop / break cauliflower into small pieces, steam with garlic cloves until soft, 20-25 minutes (I used a bamboo stacked steamer). Combine cauliflower and garlic with beans and milk, purée in batches in high speed blender or food processor. Stir in butter, salt and pepper, transfer to serving bowl.

optional add: these are really good with the cheddar.

That most certainly sounds like comfort food at it’s finest. To be honest, add garlic and Earth Balance to anything, and it’s totally comfort for me ;)

I’l be thinking about you guys. Fingers and toes all crossed ;-) And I love the addition of the beans I dont’ know what I did one time but some crazy concoction and we realized that they are so similar to smashed potatoes if done the right way.

I usually, when I do, which is rarely, mash cauliflower with potatoes. Love the unexpected bean mash in addition here and almond milk. Real nice twist. I should make a cauli mash more often. It’s yum!

Good luck! I hope it all goes well :) My dad doesn’t like vegetable, so I often sneak cauliflower into his mashed potato and don’t tell him! He used to do the same to me as a kid, hiding veg and beans in the pasta sauce. About time I returned the favour!

I made this tonight, with the hope I could it to my children under the guise of “potatoes”. Unfortunately, I was out of white beans, and left them out. Although the cauliflower came out creamy and delicious, it were also extremely spicy. Akin to a very hot radish. Just curious if anyone else has run into this. I ate mine, but they really burned! Maybe it was the beans that adds the balance?

I’m sorry to hear this – leaving out the beans essentially cuts the volume of the recipe in half, so maybe cutting the amount of garlic in half would have helped (I am thinking the spicy came from the garlic?).
