There’s IHOP pancake day (February 28?) then there’s National Pancake Day, which I think actually happens several times a year.
The National Pancake Day that I always remember is the day before my birthday… and that is today!
I have a huge roundup of recipes, a few from me and many from my clever friends – delicious pancakes to celebrate National Pancake Day.
All I have to do now is decide which ones I should make for my birthday breakfast…
carrot cakes with maple cashew cream
grain free gingerbread protein pancakes
double rich chocolate protein pancakes
german chocolate pancakes (with a surprise ingredient!)
lemon blueberry protein pancakes
maple cinnamon protein pancakes with glazed apples
whole wheat blueberry pancakes with blueberry topping

I agree with Heather. Everyone freaks out about pancakes, but I haven’t had them in years and really don’t crave them at all. However, your spinach pancakes always look delicious.

I went years without a single pancake – except for my spinach cakes, which I use as bread. Then I made some breakfast pancakes recently, and … I cannot stop? …and I had to celebrate pancake day…

Wow, now that is quite a collection of pancakes! I just made pumpkin pancakes this morning for the first time and my kids loved them. Will have to try carrot next time.

Can I ask why you soak the cashews? Does it make them soft and mushy? I have to try this recipe on the weekend.
hi Elle! yes, I used to soak the cashews to make them softer. I don’t always do that now, with a high powered blender I use them dry (and add water as needed).

Many thanks for all you share, especially superyumful posts like this! My favorite pancakes are any of them…really, I love them plain, thick with fruits or veggies mixed in, rolled around my favorite fillings, topped with vegan ice creams or almond butter or…ohhhh, the variations of the wondrous pancake never cease.!
