pumpkin whoopie pies with ginger cream

It’s giveaway time!

But first, pumpkin.

I’m certainly getting in the spirit of the changing seasons and the upcoming holidays, but I really don’t go too crazy with pumpkin this time of year. I enjoy pumpkin year round, so aside from the classic warmly spiced holiday desserts, it’s just another ingredient to me.

This would be one of those warmly spiced holiday desserts.

The holiday? um. Thursday?

pumpkin whoopie pies

adapted from lemon cardamom cake stacks

makes 20-22 whoopie pies (10-11 sandwiched)

dairy, egg, soy and gluten free, vegan

1/2 cup butter (Earth Balance Soy Free), melted
2 tablespoons flax seed
1/3 cup + 1 tablespoon water
3/4 cup maple syrup
3/4 cup pumpkin puree (Pacific Natural Foods)
2 cups gluten free all purpose flour
2 teaspoons cardamom
1 teaspoon baking soda
1/2 teaspoon xanthan gum 

Preheat oven to 350.

Melt butter and set aside to cool.

Grind flax seed in blender, coffee grinder. Place 2 tablespoons flax in a bowl, add water and stir. Place in refrigerator to set into gel (this equals / replaces two eggs).

Stir maple syrup and pumpkin into cooled melted butter, add flax mixture. Sift together flour, cardamom, baking soda and xanthan gum, add to wet ingredients and stir until just combined.

Fill prepared whoopie pie (or cupcake tin) 2/3 full, or divide between two 9 inch rounds. Bake 13-17 minutes for whoopie pie or muffins, 28-33 minutes for large cakes, or until inserted toothpick comes clean. Cool completely before frosting.

gluten, dairy and egg free, vegan

8 ounces cream cheese (Tofutti)
1/4 inch (small) piece ginger, peeled and grated
1 tablespoon cardamom
2 – 2 1/2 cups powdered sugar

Whip cream cheese,  grated ginger and cardamom until softened, gradually adding powdered sugar until desired consistency is reached. Transfer to piping bag or frost as desired.

I visited PF web site. I already love their broths and soups and nut milks, so I’d like to try some of the flavors of soup I haven’t tried, and the jellied cranberry sauce. The Pho soup starter sounds really good, too! OMG, so many things I’d like to try.

I don’t want to be entered, but I wanted to say that I also enjoy pumpkin year round and get kind of confused when everyone freaks out over it. I get seasonal flavors–they’re fun!–but it’s not an endangered species. :)

Anyway, some type of raw pumpkin ball would be interesting!

Another recipe to add to my growing “I want to make every recipe you post” list. It really would be easier if you just moved in next door so we could eat them together – I’m a great taste tester. :)

And this giveaway is great – love Pacific! With the pumpkin puree, I think it might work well in a pumpkin cupcake or regular cake – I really would like to make a dessert like that this month!

I love pumpkin puree. I eat it straight from the can (or box, in this case)! I’ve been making pumpkin muffins almost every day- but my other favorite thing is a pumpkin steamer- 1/4 c pumpkin puree, 1 c almond milk, 1 tsp pumpkin pie spice + a little vanilla stevia. Stir up it, heat it up and DRINK.

And I would definitely stock up on their creamy soups! I love having cartons on hand to add leftovers veggies/etc. to (like poached eggs–my new in-soup obsession). And especially tomato soup, I always want tomato soup on cold/rainy days, so I stock up!

I want the Tom Yum and Vegetarian Pho starter in my kitchen NOW. I love their Cashew Carrot Ginger soup and the Curried Red Lentil sounds delicious (even though they aren’t vegan…vegan with benefits, right?). I’ve also been curious about their oat milk.

Also, I have a hard time finding their mushroom broth and it is exactly what I need for my vegan mushroom soup!

I would definitely pick the condensed Cream of Mushroom, Cream of Celery, and Cream of Chicken soups! I love to make casseroles but can’t use conventional condensed cream soups because of the MSG.

I would use the thicker soups as I usually do as a salad dressing (strange but soo good) and I would use the pumpkin so AM smoothies, pumpkin chai lattes and nut milks to make vegan yogurt!

After visiting Pacific Natural Foods’ website, I’d definitely place their chocolate hazelnut milk as a high priority on the list of things I’d choose… sounds like liquid Nutella! All of the products you mentioned in this post sound great, too.

Visited the site! Those soup starters REALLY excite me. The Tom Yum and Vegetarian Pho especially. I love both of those flavors sooooo much, and rarely get to satisfy the craving.

That said, Pacific almond milk is always a favorite. =)

i have used a number of pacific products before (i love the b ‘nut and black bean soups) but the product i am most eager to try is the vegetarian pho base, which i haven’t even seen in stores! would be so neat to have a veg version of this complex and savory ethnic food fave. can smell the fresh herbs waiting to wilt on that steamy broth already!

They have some really great sounding products. I would definitely choose the pumpkin puree, and I would try the Hazelnut milk, I have never seen that. All of their soups look amazing too! I would love to try the Sweet Potato Soup and the Roasted Garlic Mushroom Lentil…ooo and the Rosemary Potato!

i’m a huge pumpkin fan : ) my 91-yr-old mom is too, so i whet her appetite by making her pumpkin bread with walnuts & dried cranberries, and pumpkin chocolate chip muffins! delicious and high in vitamin A! or a friend of mine has a great vegan un-cheesecake recipe, i’d like to make that with pumpkin and spice!

visited the Pacific Foods website – they have lots of things I had not seen on the shelf before! I already know many of their great soups. I ‘d love to try the 7 Grain Vanilla beverage as a shift from soymilk! The whole-cranberry sauce looks terrific, I could do a lot with that!

BTW I’m already planning on making those pumpkin whoopie pies for Thanksgiving dinner dessert! I go to my oldest friend’s house, she has 40 – 50 people for Thanksgiving every year & I bake bread and take a dessert. Gives me an opportunity to show folks how yummy vegan can be!

I LOVE pumpkin and use pumpkin puree all the time, especially in the chilly months. One of my favorite ways to use it is to thicken up soups and stews. Or gluten free & vegan pumpkin cookies! yum!

2) I would for sure get some vegetable broth. I always buy their broth and it is delicious! Would love to try their soy milk. Saw it the other day on Amazon. Didn’t know they made it before! The red pepper and tomato soup sounds delicious, as well as the veg pho. Definitely some pumpkin puree. Perfect for the holidays!

From the Pacific Natural Foods website, the Butternut Squash Bisque looks awesome, as does the Tortilla Soup starter (I was just thinking about making some). I’d definitely use the pumpkin puree and turkey gravy too!

I am overseas for a time so you do not have to enter me, I wanted to comment how wonderful these cakes are. made them today (gratefully my brother sends me pumpkin here) and took them to an evening celebration, they were enjoyed very well! having no chai (perhaps on next brother list?) I used various spices (nutmeg, cinnamon) so I rather like to think they were similar. thank you, this is a keeper!

LOVE Pacific Foods! I love the fact that they make condensed soups–I do a lot of casseroles, and I don’t like using the checmical-laden ones if I can help it! I’m also a big fan of their stocks–I’d probably get a bunch of those.

I literally cannot get enough pumpkin. I recently won a five pound pumpkin from a festival for guessing four random herbs correctly. One week later, it’s mostly gone! Pumpkin and me…any time of the year. It’d be nice to have it canned/boxed for occasions when I can’t get to the store.

Let’s see, if I had the pumpkin puree, I’d use it for everything. Smoothies, oats, breads, pancakes, stir fries, casseroles… Oh the possibilities.

Okay so I think I figured out what I would choose…

Most of their non-dairy milks (I’ve never had hazelnut milk before), all their vegan soups (the spicy black bean in particular sounds awesome), all their vegan soup stocks, and pumpin puree.

This prospect is so cool for me. Right now I’m vegan and living in a tiny dorm on a meal plan that is not always vegan friendly. Sometimes I go to the dining hall and not even the steamed broccoli is vegan. Seriously, why steam the broccoli if you were just going to put butter on it?

My sacred place is my room where my mini fridge is stocked with fresh fruits and veggies and my closet is like my pantry. I usually get a lot of kitchen time because other kids just use it to heat up ramen noodles in the microwave. Grocery money is limited, though, so it would be amazing if I won this and got to stock up on such top quality products.

I hope that the numbers are on my side!

I am a HUGE pumpkin fan. I love that it’s so seasonal so there isn’t even time to get sick of it. My favorite recipes I have ever made were pumpkin spice cookies that were way better than any Starbucks latte and the accidental thanksgiving pumpkin pie that went from disaster to delicious!

Honestly, I’m a college student so the products that look the most appealing are the ones that seem like they could fulfill the whole in my life that is homecooked food. The holiday specials all look especially appealing. Whole berry cranberry sauce is something I could definitely get into.

I’d make pumpkin custard with the pumpkin puree. It’s less decadent than pie, but still extremely satisfying when you want pumpkin pie :)

Things I’d chose: the pho starter, because it’s time consuming to make the broth (and expensive, mushroom stock (best mushroom gravy ever), I’d definitely buy all of the holiday products that are out as well.

I eat paleo so I love most of your raw items because they are usually gluten free or easily adaptable. I would love more pumpkin recipes using pacific brand pumpkin
